This amazing, crowd-pleasing millionaire spaghetti is so good and low carb/trim healthy mama s!

I made this recipe for a group of teens (and adults). This group can often be picky! Everyone, including my family, that tried it, loved it. This is the recipe I will be taking to our ladies retreat for Italian night. It is that delicious comfort food type of meal. Absolutely perfect for get-togethers, Sunday lunches, or just a cozy night on the couch.

I did use dreamfields spaghetti noodles.

My family (including my hubby) are not fans of spaghetti squash or zoodles. If you are wanting to make 2 pans so you can use different noodles, that would definitely be possible, but a little bit more work for you. I used to do that but when life gets crazy, I just can’t make that work. I think this would be great with spaghetti squash. I think spaghetti squash bakes nicely in dishes like this.

There are a lot of variations out there for millionaire spaghetti.

I saw recipes using cheddar cheese, multiple layers like lasagna, and so many other variations. I wanted to keep this somewhat like the majority but also simple. I also tried to make this a bit more budget friendly. Instead of using 2 jars of marinara I used 1 jar and 1 can of petite diced tomatoes. I used Jimmy Dean breakfast sausage (I found some on clearance) but you can use whatever ground meat you have. If you only have plain ground meat, add some salt, pepper, and Italian seasoning to it. Now, on to the recipe.

Million Dollar Spaghetti: Low Carb THM S

Ingredients

  • 1 Lb Ground Meat, I used Breakfast Sausage
  • 1 S-M Onion, diced
  • 1 T Minced Garlic
  • 1 t Italian Seasoning
  • 1 t Salt
  • 1/2 t Black Pepper
  • 24 oz Jar Marinara Sauce
  • 14 oz Can Petite Diced Tomatoes
  • 8 oz Package Cream Cheese, I used reduced fat
  • 1 C Ricotta Cheese (you can sub cottage cheese)
  • 1/3 C Sour Cream
  • 2 C Shredded Mozzarella
  • 1 Pckg Noodles- I used one box of Dreamfields, use whatever your family will eat
  • Few T Olive Oil to coat pasta

Toppings

  • 1-2 C Shredded Mozzarella Use as much as you want
  • 1/3 C Shredded Parmesan
  • Dried Parsley Shaken over the top

Instructions

  • Preheat oven to 350. In a large pot, bring water to a boil to cook the pasta. In a large skillet over medium heat, add meat, onion, garlic, and seasonings.
  • Cook until cooked through.
  • In a medium to large bowl combine cream cheese, ricotta cheese, and sour cream.
  • Once mixed together, add the shredded mozzarella.
  • Once pasta is cooked to your liking, drain. Toss with a few tablespoons of olive oil. And then 1 cup of the marinara. In a 9×13 pan add 1/2 of pasta.
  • Top with all of the cheese mixture.
  • Spread out over the top of the noodles.
  • Top with the rest of the noodles.
  • In your skillet with the ground meat, add the rest of the marinara sauce and the can of petite diced tomatoes. Stir. Pour on top of the noodles. Sprinkle with the remaining cheeses and parsley.
  • Serve hot with a salad, if desired.

    This spaghetti was so good! It doesn’t even taste low carb, if I didn’t know if was Jennifer’s recipe I would not have even been able to tell the difference! All our teens ate it up and loved it!
