This bacon cheeseburger casserole is really easy to make and tastes great. If you need something easy for a busy weeknight or on the go weekend, surprise your family with this yummy dinner. It’s so simple to make and requires no special ingredients. I planned to make this bacon cheeseburger casserole on the weekend but it was one of those weekends. We had so many problems and errands, nothing really went right. I ended up having to do something different for dinner, so my son ended up making it for us Monday.
This dinner was part of my new meal prep I have been doing.
This is where I take all of the ingredients for dinner in a small plastic tote. I measure out the seasonings, cheese, liquid ingredients, and anything else the recipe calls for. Everything goes in the tote and is stored in the fridge. This has truly been game changing for me getting dinner made and staying on plan. Almost every Monday is a crockpot recipe, but sometimes life doesn’t go exactly as planned.

We topped ours with chopped pickles and tomatoes. I topped mine with mustard and sugar free barbecue sauce. My hubby used ketchup and mustard. You can serve this over a salad but I had a side salad instead. You can top it with Mexican toppings if you like a guacamole burger. You can use pepper jack cheese instead of the cheddar. Change this recipe and make it taste like your family’s favorite burgers. There are so many possibilities. To make this recipe easier, I used packaged real bacon pieces instead of cooking up some fresh bacon. You can use either one, but I went for the easier option.

Low Carb Bacon Cheeseburger Casserole
Ingredients
- 2 Lb Hamburger Meat
- 1 Med Onion, diced
- 1 T Minced Garlic
- 2 t Smoked Paprika
- 1 1/2 t Salt
- 3/4 t Black Pepper
- 1 T Worcestershire sauce
- 4 Eggs
- 3/4 C Egg whites or you can use 4 more eggs for a total of 8 eggs
- 4 T Tomato Paste
- 1/2 C Heavy Cream
- 1/2 C Almond Milk
- 1/2 t Salt
- 1/4 t Pepper
- 2-3 C Shredded Cheddar Cheese
- 1 Pckg Real Bacon Pieces
Toppings for your serving: Tomatoes, pickles, mustard, ketchup, etc.
Instructions
- Brown ground beef in a medium to large skillet over medium heat. Add onion and cook for 4 more minutes. Add the garlic and seasonings and cook for another minute.
- Place ground beef mixture in a 9×13 pan. Whisk together the eggs, egg whites, heavy cream, almond milk, salt and pepper, and tomato paste. Pour over ground beef.
- Bake at 350 degrees for 25 minutes. Top with cheddar cheese and bacon. Bake another 10-15 minutes.
- Serve hot with your favorite toppings.
Do you mean to have 8 eggs in this or just 4 since there are 2 lines of 4 eggs?

Basically you can do 4 whole eggs and 3/4 cup of egg whites to lighten it up or do 8 whole eggs.
