Simple and Delicious Low Carb Bacon Cheeseburger Soup

This decadent bacon cheeseburger soup is your new best friend. Not really, but it might become your new favorite recipe. This soup is packed with savory ground beef, crispy bacon, and melty cheese!

You won’t even miss the carbs in this soup. It is hearty and filling without the carbs. This recipe is surprisingly easy to make. It also comes together quickly, so it’s perfect for busy nights. You end up with a bowl full of comforting familiar flavors that everyone will love. And this recipe is totally customizable for you and your family.

Get creative if you want.

You can add extra veggies like bell pepper, small, diced carrots, and cauliflower. Spice it up with some jalapenos, cayenne, or hot sauce. Change it up with different cheeseburger ideas. Like: southwest. Use pepperjack cheese, guacamole, and jalapenos.  Southern style: Sugar free bbq sauce, crispy fried onions, cheddar cheese. There are lots of different way to make this. Ingredients

  • 1 1/2 Lb Hamburger Meat
  • 1 L Onion, diced
  • 1/2-1 M-L Bell Pepper, diced
  • 2 T Minced Garlic
  • 2 t Onion Powder
  • 2 t Garlic Powder
  • 1 t Smoked Paprika
  • 2 T Tomato Paste
  • 1 C Chopped Tomatoes
  • 2 T Dijon Mustard
  • 1 1/2 T Worcestershire Sauce
  • 1 t Salt
  • 1/2 t Pepper
  • 1 C Shredded Cheese
  • 4-6 Slices Cooked Bacon
  • 4 C Beef Broth, add more or less as desired

Toppings: Whatever you want, Extra cheese, diced pickles, mustard, ketchup, onions, jalapenos, etc.

Instructions

  • I bake my bacon most often. However you are going to cook your bacon, get it going.
  • Brown meat. Add onion, bell pepper, and garlic.
  • When cooked, add seasonings, tomato paste, mustard, and Worcestershire sauce.
  • Add 4 plus cups of beef broth. It depends on how thin or thick you want the soup. Add the shredded cheese.
  • Heat through/
  • Here are the toppings we used. Plus more shredded cheese.
  • Serve.
