Sugar Free Cherry Amaretto Oatmeal

I love oatmeal but sometimes I get bored with it. There are two queens of oatmeal, Chocolate Covered Katie and Pearl. In my vegan days, Katie was my go to recipe blogger. Today, Pearl s my go to oatmeal queen. This oatmeal recipe is a take on one of her recipes. I love cherries. Cherry filled pastries, pies, cakes, cookies, and more. Cherry is my favorite. Making on plan cherry dishes is a bit more challenging without all of that sugar and white flour.

This thm sugar free cherry oatmeal recipe fits my typical criteria for recipes.

It is so easy, fast, and delicious. The base recipe uses ingredients found at your local store. I used half old fashioned oats and half steel cut oats for the oatmeal. Both oats can be found at Aldi or Walmart. You don’t have to mix up the oats, just use all old fashioned if that is what you have. I do add a couple extra ingredients for health benefits but they aren’t essential to make the recipe taste good.

Let’s talk about the ingredients

My cherries are just regular frozen cherries. I used a heaped 1/2 cup of them. I thawed the cherries in the microwave for 30 seconds and then cut them in halves or thirds. I used 1 tsp of psyllium powder (not flakes). The health benefits of this product are amazing and I highly recommend it. I bought it off of Amazon since I ran out of what I had from THM, and I only needed one item.

This ingredient isn’t necessary in this oatmeal recipe but it does add to the health benefits.

This ingredient also adds to the thickening of the oatmeal. You will want to reduce your water to 1 1/2 cups total. I also add collagen for the protein and some baobab as well. None of these ingredients add flavor, they just up the nutrition aspects of this breakfast dish. It will taste delicious however you make it. I wanted to add some spirulina but didn’t want to scare everyone off of blue green oatmeal. Ha Here is a link if you are interested in looking at the product.

Cherry Amaretto THM E Oatmeal

Servings 0

Ingredients

  • 1/4 C Old Fashioned
  • 1/4 C Quick Steel Cut Oats
  • 1 3/4 C Water
  • 1 Pinch Salt
  • 1/2 Frozen Cherries, thawed and cut into bite size pieces
  • 1/2 t Vanilla Extract
  • 1/2 t Almond Extract
  • 1 t Psyllium Powder If using flakes, use 2 tsp
  • 2-3 T Sugar Substitute, I used swerve
  • 1/2 t Ground Cinnamon
  • 1 Doonk Pure stevia, optional for extra sweetness
  • 1 Scoop Collagen, optional
  • 1 T Baobab Powder, optional

Instructions

  • Add salt, oats, and water to a saucepan over medium high heat. Stir and allow to come to a boil
  • Once the mixture has come to a boil and most of the water has been absorbed, add everything except the cherries. Whisk until the mixture is thick and not soupy.,
  • Pour mixture into a large bowl and top with thawed cherries. Add a small sprinkle of sweetener on top, if desired.
