Ingredients

  • 1 Lb Lean Ground Beef
  • 1 Pckg Frozen Cauliflower Rice
  • 4 oz Mushrooms, diced tiny I only had half of an 8 oz package so that's what I used
  • 1 M Onion, chopped
  • 1 t Salt
  • 1/2 t Pepper
  • 2 T Tomato Paste
  • 1/4 C Sugar-free BBQ sauce
  • 1-2 T Mustard
  • 1 T Worcestershire Sauce
  • 1 t Smoked Paprika
  • 4-8 Pieces Bacon
  • 1 C Shredded Cheddar Cheese

Toppings: Chopped Lettuce, Diced tomatoes, pickles, and onions, sesame seeds, and more

Instructions

  • If desired, cook cauliflower rice. I cook the cauliflower rice for at least 10 minutes in water or broth. While the rice is cooking, I work on everything else.
  • Add hamburger meat to skillet. I used 96/4 ground beef. So I didn't worry about straining the meat. I cooked it right in the skillet after the cauliflower was mostly soft.
  • Add the onions and mushrooms.
  • Cook the meat mixture until as done as desired. I cooked everything together about 10 minutes.
  • Add the salt, pepper, smoked paprika, 2 T tomato paste, 1/4 sugar-free bbq sauce, mustard, and 1 T mustard.
  • Cook about another minute.
  • Top with shredded cheese and bacon.
  • While cooking, prep your toppings.
  • Top your bowl as desired.
  • We added some more sugar-free ketchup, mustard, and sesame seeds.
