Trim Healthy Mama E Black Bean and Corn Burritos

This easy trim healthy mama e dinner was really easy.

I ate mine with an xtreme wellness tortilla. My kids ate theirs with regular flour tortillas and shredded cheese. I used a wedge of light laughing cow cheese for my cheese on my burrito. Everyone else used shredded Mexican cheese. With the light laughing cow cheese, I didn’t miss the cheese!! This was really delicious for a burrito. As a thm E burrito, it was amazing!! No avocado, no regular cheese, or sour cream!!

Leftovers? Or no low carb tortilla options?

You can serve this on top of lettuce. Or you could even top a baked sweet potato with this burrito filling. This would be a great dinner to make for your family and take the leftovers and use throughout the week. Besides the lunches I mentioned above, scramble some egg whites and add the filling. Bake a couple corn tortillas, top with light laughing cow cheese and top with the meat mixture. There are so many uses for this burrito filing!

Sour cream substitute, what did I use?

I personally don’t think that non-fat Greek yogurt is a substitute for sour cream. I love sour cream!! I have struggled with a yummy substitute for trim healthy mama e meals. What I did for the burritos and to top my salad ended up really yummy. I took non-fat Greek yogurt, juiced half of a lime, and added chili powder and ground cumin. Stir everything together and adjusted until it tasted just right. You could add some cayenne, garlic powder, onion powder, etc. I mixed the leftover yogurt mix with our homemade salsa for salad dressing on my salad. It was really good!

Trim Healthy Mama E Burritos

Ingredients

  • 1 Lb Lean Ground Meat
  • 1 Med Onion, diced
  • 4-5 Mini Bell Peppers, you can use a regular bell pepper
  • 2 t Chili Powder
  • 1 t Ground Cumin
  • 1 t Salt
  • 1/2 t Black Pepper
  • 1 t Garlic Powder
  • 1/2 t Onion Powder
  • 2 Cans of Black Beans, rinsed and drained
  • 1 Can of Corn, drained
  • 2 Cans of Diced Tomatoes and Green Chilis
  • Low Carb Tortillas

Burrito Filling: Chopped lettuce, diced green onions, chopped cilantro, salsa, light laughing cow cheese, sour cream substitute, etc.

Instructions

  • Brown ground meat. I used extremely lean hamburger meat.
  • Add onion, bell pepper, and seasonings.
  • Cook for a few minutes. I don't like any firm bell pepper pieces. You can skip this part and just add directly to the crockpot if you want.
  • Add meat mixture to the crockpot and add the beans, corn, and tomatoes.
  • Stir everything together and cook on low 3-4 hours.
  • Make your burrito with your desired ingredients.
  • I heat my tortillas in a skillet. They seem to be a little "wet" maybe.
  • Serve warm.
