Trim Healthy Mama E Mashed Potatoes

These trim healthy mama mashed potatoes couldn’t be easier!!

Since THM now allows potatoes, these potatoes are made a lot in my house. My whole family loves them. No one knows there is any cauliflower in them. I promise! I have made these at least 4 times and I kept waiting for someone to suspect something. Nope, they just think they are yummy mashed potatoes. This recipe is so fast to make, faster than the mashed potatoes I used to make.

The potatoes I use are the small potatoes that come in a medley bag.

You can get this bag at Aldi, Walmart, Costco, and I bet at most other grocery stores. One thing that is great about them is that you don’t have to peel them! You just need to wash them and cut them into quarters or halves, depending on their size. To a medium pot of boiling water you add a frozen bag of cauliflower and your potatoes. Boil until soft. Drain, add salt, pepper, cream cheese and mash. I divide this between 5 people to keep the fat right at or below 5 grams of fat per serving. If you serve this with a low-fat meat source, this will stay in E territory.

This recipe is going to become a weeknight favorite.

It rally is super easy to make. On crazy busy nights, I sometimes use these in meals that are a thm s, so I end up with a crossover. That’s still on plan but might not be the best for weight loss. If you have been missing mashed potatoes, give this recipe a try, I think will hit the spot.

Ingredients

  • 12 oz Frozen Cauliflower
  • Equal amount of potatoes You can measure the cauliflower in a measuring cup and get an equal amount of potatoes if you don't want to just eyeball it
  • 4 oz 1/3 Less fat Cream Cheese
  • Salt and Pepper

Instructions

  • To a medium pot of boiling water, add a few pinches of salt. Add cauliflower and potatoes.
  • When the potatoes and cauliflower are soft, add salt and pepper and cream cheese.
  • Mash with a masher. Taste. If it needs more salt or pepper, add a little more. Serve warm.

    This is the only way I make mashed potatoes now! I leave the skins on (using Yukon golds) and boil them with some chicken stock and garlic – SO delicious! Even got my mom to start making them this way!
