Trim Healthy Mama E, Ramen

Here is a super simple trim healthy mama e, ramen recipe.

If you like ramen but don’t want the awful ingredients in the packs from the store, I have a great recipe for you. This ramen was a huge hit with my family. They all love Asian foods (but have different tastes) and they all loved this recipe. This will be made at least once a month in the colder months, they loved it this month.

Use whatever noodles you have/want to use.

I like to use noodles from Costco. I buy ramen noodles that are millet and brown rice. They cook in 3 minutes! Because they cook so fast you can make this last minute! My hubby loves these noodles. He has even used them to make his own version of “ramen”. This recipe is so easy and can be adjusted to your family’s tastes. As written, everyone loved it, even my mushroom hating kid.

Let’s talk fat.

In the recipe I have a teaspoon of sesame seed oil. And, as you can see I topped mine with a whole egg. That was supposed to be a soft boiled egg but I cooked them too long. This recipe served 5 adults. So that is 5 grams of fat for the whole egg and 1/5 of the teaspoon of sesame seed oil. You can leave out the egg, eat half an egg, or not worry too much about the 1/5 of a teaspoon of sesame seed oil.

Soup, noodles, both?

You can make this as soupy as you want. We made this a little soupy. It’s really what you are wanting and maybe even the weather. It was really cold outside so we went with a bit more of a soup. However you make it, I am sure your family is going to love it!

Servings 0

Ingredients

  • 1 Lb Ground Beef, low fat
  • 1 Med Onion, diced
  • 2 M-L Carrots, shredded
  • 8 oz Mushrooms, cut or diced
  • 1 T Minced Garlic
  • 1 Inch Ginger, minced Or use 1 t powdered ginger
  • 1 t Sesame seed oil
  • 4 C Broth or more Use much or as little as you want
  • 1/4 C Bragg's or Soy Sauce
  • 1-2 t Siracha
  • 1 T Fish sauce, optional
  • How many "sets" of noodles you want, we used 4.

Toppings:

  • Soft boiled eggs
  • Siracha
  • Green Onions, diced

Instructions

  • In a pot brown meat and onion over medium heat.
  • Add carrots, mushrooms, garlic, and ginger. Cook for a few minutes.
  • Add broth, Bragg's, sesame seed oil, and siracha. Cook and bring to a boil. You will need to increase the heat to high. Once boiling, add your noodles.. Stir and separate as possible. Cook until noodles are done to your liking.
  • Serve with desired toppings.

    Have you frozen this soup before? I’m the only one eating it, so just wondering. 🙂

      I haven’t. I don’t know how the noodles would reheat.

  • I don’t think I have ever seen the brown rice noodles at Costco. Where do you find them. My kids LOVE ramen. My hubby would think this was fabulous to eat as well. Thanks again for your awesome work!

      I am pretty sure it’s on the isle with the pasta, beans, and rice. Search Costco brown rice noodles and you will see the picture of what they look like. I hope you find them, even my hubby loves them.
