Easy and Mouthwatering Crockpot Beef Fajitas
Here is another super easy 5 minute crockpot recipe!! This recipe brings you the delicious flavor of this Tex-Mex classic, but with the convenience of the crockpot. By utilizing the crockpot, the meat becomes incredibly tender and infused with flavor. The low and slow cooking process allows the flavors of the meat, vegetables, and seasonings to meld together perfectly.
Tender Meat
These crockpot fajitas are so tender. I find traditional beef fajitas to be on the tougher side. Not so with this crockpot recipe. The meat is very tender. You can cook even longer and end up with shredded meat. Here is what I did. I cooked the sirloin meat whole. A couple hours in I cut the steak into strips. And then about 30 minutes before serving, I cut each strip into smaller strips. They were perfect.
Fresh or Frozen veggies, that’s up to you.
In this series I am trying to show how we can get dinner made in 10 minutes or less. There isn’t time for cutting bell peppers and onions for the fajitas, so frozen it is. If you want fresh, use fresh. If you like your veggies a bit more chewy, add them later in the cook time. Especially if you are using frozen. They really cook down. I prefer them this way. If you are eating these low carb, or trim healthy mama s, use low carb tortillas, lettuce cups, or make a fajita bowl.
Serve with Spanish cauliflower rice. This recipe is so good!!!
Crockpot Beef Fajitas
Equipment
- Crockpot
Ingredients
- 2-3 Lb Sirloin steak
- 1/2-1 Pck Frozen Bell peppers and onions
- 1 Lime
- 2 t Salt
- 1 t Pepper
- 1-2 t Chili Powder
- 1-2 t Ground Cumin
- 1 t Onion Powder
- 1 t Garlic Powder
- 1 t Smoked Paprika
Instructions
- Place sirloin in crockpot base. Sprinkle on seasoning. Top with onions and peppers. Juice lime on top. Cook for high 4-5 hours or low 6-8 hours.
- If desired remove steak and slice into strips. I did this to make sure it was cooked in time.
- If desired remove strips and cut into smaller pieces.
- Place back into the crockpot to finish cooking and get a bit more tender.
- Serve as desired.
