Summer Stock-Up: Fill Your Freezer & Fuel Your Family (THM Style)
Week 10: Beef and Broccoli & Chicken Enchilada Casserole
Welcome to week 10 of our Summer Stock-Up series! 🎉 We are prepping two delicious recipes that are sure to become family favorites. Plus, we’ll make sure your pantry is stocked with essentials for the upcoming holiday season!
What’s on the Menu?
Freezer-Friendly Recipes
1. Pressure Cooker Low Carb Beef and Broccoli
Ingredients:
- Sirloin Steak
- Brown Sugar Sub
- Bragg’s or coconut aminos
- Sesame Oil
- Garlic, ginger, and other seasonings as specified in the recipe
Prep & Freezing Instructions:
- Label Bags.
- Place all ingredients into a gallon freezer bag.
- Label and freeze.
Cooking Instructions:
- Thaw overnight in the fridge. Cook using your pressure cooker as directed for a tasty and quick dinner.
- OR Dump the baggie into your crockpot, add any seasonings or maybe broth you didn’t add the day of. Cook. When almost done, cook your frozen broccoli and add to the crockpot. Stir and let cook about 15 more minutes (while you make the cauliflower rice).
2. Easy Delicious Dump-and-Go Crockpot Chicken Enchilada Casserole
Ingredients:
- Â 1 1/2 Chicken Breasts or Thighs
- 1/2 Package Frozen Bell Peppers and Onions
- Taco Seasoning, diy or store bought
- Black beans
- Salsa
Prep & Freezing Instructions:
- Combine all ingredients in a freezer bag.
- Seal and freeze.
Cooking Instructions:
- The night before, move to the fridge to thaw. Cook in your crockpot on low for 4-6 hours for an easy, delicious meal. Add cut tortillas and cheese as the recipe says, especially to avoid mushy tortillas.

As we approach the festive season, let’s stock up on some essentials:
Green Chilis
- Great for adding a zesty kick to various dishes.
Spices and Sweeteners
- Spices:Â Cumin, chili powder, garlic powder, and paprika for all your holiday cooking needs.
- Sweeteners: Consider stocking up on THM-friendly sweeteners like stevia or erythritol for your holiday treats. My favorites are brown swerve and allulose
Ensure you have ample supplies on hand for holiday baking and cooking!
Freezer Prep Tips
- Label Your Bags:Â Don’t forget to mark your bags with the contents and date!
- Batch Cooking:Â If you have extra ingredients, double the recipes for more meals.
- Reorganize Your Freezer:Â As you stock up, make sure everything is easily accessible.
THM-Friendly Serving Suggestions
- Serve your beef and broccoli over cauliflower rice for a low-carb meal.
- Pair the chicken enchilada casserole with pico de gallo, Spanish rice, or guacamole.
