Pressure Cooker, Low Carb Beef and Broccoli

This pressure cooker beef and broccoli is low carb, trim healthy mama s, and a family favorite.

I had some mommas ask me for more pressure cooker recipes. I used to have an instant pot and now have a ninja foodi. They are amazing kitchen appliances. Both are pressure cookers and slow cookers. You can sauté, brown, and then finish cooking in both of them. So, essentially, one pot cooking. Perfect for busy families. If you don’t have a pressure cooker, you can make this in your crockpot. You will just need to brown in a skillet and then transfer to the crockpot.

My family absolutely loved this dish. Not only is it easy, it perfectly filled any need for off plan Chinese food. My family loves Asian foods. They love sushi, Thai, Chinese, Japanese, and more. Any time I make something Asian inspired, they usually love it. This recipe wasn’t any different. No leftovers either.

I used sirloin steak for my meat in the recipe.

I have a local grocery store that often has meat buy one get one for a penny. That’s the only way I can afford to get this cut of meat. If you can’t find sirloin, or even afford it, I would use hamburger meat. The flavors will still be good and your pocketbook will thank you. If you need a delicious on plan fried rice recipe, this one right here is a game changer. My family wouldn’t eat the cauliflower rice I used to make. Low Carb Beef and Broccoli

Equipment

  • Pressure Cooker or Crockpot

Ingredients

  • 1 1/2 Lb Sirloin Steak, sliced into strips
  • 2 T Minced Garlic
  • 1 T Olive OIl
  • 1-2 T Shredded or diced Ginger
  • 1/2 t Black Pepper
  • 1/2 C Beef Broth
  • 2 t Seseame Oil
  • 1/2 C Bragg's Liquid Aminos or Soy Sauce
  • 1/4 C Brown Sugar Substitute, I used brown swerve
  • Xanthan gum, if desired to make a thicker sauce
  • Optional, Sesame Seeds to sprinkle on top
  • 4-6 C Frozen broccoli

Instructions

  • Over medium heat in sauté mode, add oil and beef. Cook for 2-3 minutes, stirring a few times.
  • Add garlic and cook for another minute or two.
  • Add remaining ingredients, except xanthan gum and broccoli.
  • Place lid on top, lock in place, and make sure valve is closed. Cook on high for 13 minutes.
  • Cook broccoli in microwave until cooked through. When the cooking time is up, manually release the pressure. If you want a thicker sauce, remove the meat and carefully sprinkle in 1/4 teaspoon of xanthan gum. Whisk for a few minutes. If you want it even thicker, repeat the process above. I wouldn't do more than 1 teaspoon though. Add beef and broccoli to the pot and stir.
  • While the meat is cooking, make your fried rice. Cooking it my way takes longer, but the flavor is definitely worth it.
  • Serve the beef and broccoli over fried cauliflower rice. Sprinkle with sesame seeds if desired.
