I made this on a busy night when I wanted something comforting, filling, trim healthy mama friendly, and protein-packed without standing over the stove forever. It’s creamy, savory, and loaded with flavor thanks to bacon, ranch seasoning, and tender chicken — and the shredded potatoes make it feel extra cozy and satisfying.

Ingredients

1½ lb chicken breasts

1 small onion, diced
- 1 Tbsp minced garlic

1 tsp olive oil

2.5 oz real cooked bacon, chopped

1 cup reduced-fat cottage cheese

1 cup sour cream

1 package Simply Shredded Potatoes (hashbrowns)

2 cups shredded cheese (cheddar or Colby-Jack work great, regular or reduced fat)

1 packet ranch seasoning
Instructions

Preheat oven to 375°F.

Cut chicken into small pieces. Season with salt, pepper, onion powder, garlic powder, and smoked paprika.

In a skillet heat olive oil over medium heat. Add chicken. Cook until almost finished.

Add diced onion and sauté until soft. Add minced garlic.

Add ranch seasoning, cottage cheese and sour cream to the skillet. Stir.

Add bacon. Stir. I waited until the chicken had cooled before adding the shredded cheese.
- Add shredded cheese and stir.
- Add shredded potatoes. Stir.

Transfer mixture to a greased 9×13 baking dish

Bake uncovered for 15–25 minutes, until bubbly and lightly golden on top.

Let rest 5–10 minutes before serving.

Cheesy Bacon Ranch Chicken Hashbrown Casserole
Ingredients
- 1 1/2 Lb Chicken Breasts, cut into pieces Could skip this and use rotisserie chicken instead
- 1 M Onion, diced
- 1 T Minced Garlic
- 20 oz Bag Hashbrowns, I used Simply potatoes
- 2.5 oz Bag of Real Bacon
- 2 C Shredded Cheese, can use reduced fat or fat free
- 1 C Cottage Cheese
- 1 C Sour Cream
- 1 Pckg Ranch seasoning, can use homemade
- 1 T Olive oil
- 1-3 T Nutritional yeast, optional
Seasonings: Salt, pepper, garlic powder, onion powder, smoke paprika
Instructions
- Season the chicken with the seasonings listed. If desired add some of the ranch too. In a large skillet add the oil and seasoned chicken. Cook over medium heat until almost cooked.

- Add the onion. Cook for a few minutes and then add the minced garlic.

- Add the sour cream and cottage cheese (I used unblended this time, but blended would be fine too). Add the ranch seasoning. Stir. This is the bacon I used. Add the whole package.

- Add the bacon and stir. I added the cheese somewhere around here.

- Add the nutritional yeast if desired. Stir.

- Finally add the potatoes.

- Pour into a 9x13 dish.

- If desired sprinkle with parsley or some ranch seasoning.

- Bake at 375 degrees for 15-25 minutes, until bubbly.

- Serve as desired.
