  • 4 C Diced, cubed Sweet Potatoes
  • 1 1/2 lb Chicken Breasts, cut into chunks

Toppings: 1-2 fresh jalapenos, sliced 2 oz Crumbled feta (you can use reduced fat or fat-free), 2 tablespoons hot honey

Instructions

  • Mix together all ingredients except the toppings
  • Bake at 425 degrees for 15 minutes. Remove and mix everything around and bake for an additional 10-15 minutes. You want the sweet potatoes soft.
  • Add toppings and bake for about 5 more minutes. You can broil if you want.
