Nutritional Data
I used 3 servings of dates. 3 servings of dates (the ones I used) is 81 net carbs, divided by 5 is 16. You can use more or less, depending on your tastes and needs. I like to make a few small jars for dessert. I add a little pistachios and chopped chocolate on top. I have also eaten larger bowls as my pre-workout breakfast.
Here is how I make my high protein vanilla yogurt. This is always in my fridge!
Date and Chocolate Yogurt Parfaits
Ingredients
- 3 Servings Medjool Dates, pitted
- 3/4 C Milk of Choice
- Few Shakes Cinnamon, optional
- 1/2 C Raw Cacao Powder I prefer the raw for the health benefits, but use what you have or can find
- 2-4 T Sugar-free Syrup I used Lakanto, you can just use your other sweetener if you don't have this
- 1 t Vanilla
- Sweetener to taste
- Water to get to the right consistency
- 1 Pinch Salt
Instructions
- Soak dates in very hot water. Drain. Blend with around 3/4 cup of milk of choice. You can add a couple dashes of cinnamon if desired. Pour into a container.

- Mix together cocoa powder, syrup, pinch of salt, vanilla, and a little water. Go slowly. When it's close to the consistency you want (I like a spponable but also close to pourable mix), start adding in sweetener. I used a lakanto allulose blend. Taste and adjust. I like mine to be sweet but not over the top.

- If you are going to make some parfaits, place some vanilla yogurt in a container. Top with some chocolate sauce. You can add a little of the date sauce if desired. Add more yogurt, more chocolate and some date sauce. Repeat as many times as desired. Depending on the jar, I do 2-3 layers. The top layer gets more date sauce (that is where the carbs and calories are, if this is a light dessert, I don't want to go too heavy on the dates).

- Here's one with more layers.

- And the completed jar. You can swirl the layers or keep them pretty level. This is such a nice treat at the end of the night, and I know it's so good for me.
