Low Carb Chicken Divan
This is a one dish meal, or at least it is at my house. A salad on the side would be perfect if you want to add more veggies to your day. My kid who won’t eat anything if he knows cauliflower is in it, asked me if it was in here. I couldn’t lie, so he didn’t eat it. I asked my hubby if he could tell cauliflower rice was one of the ingredients and he said no. I think I have discovered the trick to make it almost disappear into the dish. Next time I might be able to convince that boy of mine to try it.
The 4 out of 4 of us who ate it, loved it. This recipe has a few steps, but they can all be prepped ahead of time. I made this yesterday and started prepping it after lunch, while i was doing other things around the house. You need to prebake the chicken breasts and cut them up.
This recipe calls for steamed broccoli. I don’t have the kind that you keep in the freezer and steam in the microwave. I steamed it on the stove in a steamer basket.
This recipe is cheesy, creamy, healthy and delicious. I guarantee that this would go over well at a potluck. No one know that it an on plan trim healthy mama s meal. Give it a try, I don’t think you will be disappointed.
Low Carb Chicken DIvan
Ingredients
- 1 1/2 Lb Precooked and diced Chicken Breasts
- 4 C Steamed Broccoli Florets
- 1 Med Onion, diced
- 2 t Minced Garlic
- Pck Cauliflower Rice, cooked in the Microwave
- 8 oz Cream Cheese
- 1 C Mayo
- 1 t Salt
- 1/2 t Pepper
- 2 t Curry Powder
- 1/4 C Water or Broth
- 2 C Shredded Cheddar
- 1 t Olive Oil
Instructions
- Add the olive oil to a large skillet over medium heat.
- Cook for a few minutes and add the garlic. Cook for 1-2 minutes.
- Add the cooked cauliflower rice. Cook for at least 10 minutes. You want the rice to be soft and take on the flavors of the onion and garlic.
- Stir in the cream cheese and mayo. Mix well. Add the salt, pepper, and curry powder. Mix again.
- Add chicken, broth, and broccoli. Stir well. Add 1 cup of the shredded cheese and stir. Put into a 9×13 dish.
- Bake at 350 for 20 minutes. Top with the remaining cheese and bake for 5 more minutes.
- Serve hot.
This recipe, “Low Carb Chicken Dlvan” is wonderful. My whole family loved it. I do find that it should be labeled a “heavy S” meal”

When do I add the Curry? I do not see it mentioned in the directions yet i see it in the ingredients list.
