Cauliflower Fried Rice
Do you need a substitute for regular fried rice? I love fried rice. Pre trim healthy mama, I never got plain white rice when I went to Chinese restaurants. I know that there are people all over the world that love a nice bowl of plain white rice. There are also people who love a glass of plain cow’s milk. Again, I can’t do it. Give me all the flavors, the sesame seed oil, soy sauce, veggies, seasoning, yes please. If that is you, then give this low carb version of the original a try.
Serve if with your favorite Asian inspired main dish. Most recently I served it with my dump and go teriyaki chicken thighs. They paired together perfectly. I haven’t tried freezing this side yet, but it is on my list of things to try. I love having a freezer with on plan foods, like the chicken that went with this dish.
Cauliflower Fried Rice
Ingredients
- 16 oz Frozen Cauliflower Rice The rice I buy at Costco comes in 1 lb bags. The ones at Aldi are smaller. If you buy yours at Aldi, you can reduce the add-ins if you want.
- 2 Med Eggs, Whisked
- 1 Med Carrot, Shredded
- 3 tsp Minced Garlic
- 3 Green Onions, diced
- 1 C Green Peas
- 2-3 tsp Olive OIl
- 2 tsp Sesame Oil
- 1 T Bragg's or Soy Sauce
- 1 T Minced Ginger Or you can use 1-2 tsp powdered ginger
Salt and Pepper to taste. You might want more Bragg's as well.
Instructions
- Cook the cauliflower rice in the microwave.
- In a large skillet over medium heat, add 1 tsp of the olive oil and the eggs. Over medium heat, gently scramble the eggs. Remove from pan when done.
- Add another tsp of the olive oil to the skillet Add garlic and the shredded carrot. Cook for a few minutes.
- Add the cauliflower rice. Stir and cook for at least 10 minutes. I added a little water when the skillet was dry so the rice didn't burn.
- Add the sesame oil to the skillet. Stir to combine. Add the green onions.
- Add the ginger, peas, and Bragg's. Stir to combine.
- Taste and add salt and pepper. Add more Bragg's if you think it needs more.
- Serve hot.
