Mexican Egg Scramble Trim Healthy Mama S
It’s summer here and chickens are in prime production with eggs. If you are looking for a new way to make your eggs, give this recipe a try. It is really good. As written, this recipe is dairy free. I wanted to try and keep it light and fresh. It tastes exactly like I wanted it to. I wasn’t in the mood for a heavy, cheesy egg breakfast. If you have garden fresh tomatoes, this will taste even better!
This recipe is very easy to make your own. You can add more or less to this and I think it will still taste great. If you like cream beaten into your eggs, do that. If you want to add pepper jack cheese or cayenne pepper, do it. If this isn’t enough food for you, add another egg. If you want to keep this on the lighter side, add some egg whites. I was going to add salsa but we were out. I think a nice spoonful of salsa would be a great topping. I think I will make these eggs for out next camping trip. If you follow the trim healthy mama eating plan, this is an s meal, just make sure to keep your beans to 1/4 cup.
THM S Mexican Egg Scramble
Ingredients
- 2 Med Eggs, beat
- 2-3 T Minced Onion
- 1/4 t Minced Garlic
- Drizzle of Olive Oil
- 1/4 C Rinsed Black Beans
- Sprinkle of nutritional yeast
To taste and preference: Salt, Pepper, Ground Cumin, Chili Powder, Cilantro, Tomato, Avocado, Jalapenos, Salsa
Instructions
- Pour a little olive oil in a small skillet that is on medium heat.
- Add your diced onion to the skillet. Allow to cook until soft.
- Add your minced garlic. Cook for another minute or two.
- Add your beaten eggs and cook for a minute or two. Add your seasonings now as well.
- Add your beans and stir. When the eggs are cooked through remove from the heat.
- Sprinkle with nutritional yeast.
- Top with desired toppings.
Really good. I added a dolip of sour cream & ate only 1/2 with a low carb tortilla. It was great!
