Low Carb Pumpkin Mousse

It is light, fluffy and delicious. I used my cheesecake berry fluff and chocolate mousse recipe as my base. Both of those recipes get rave reviews. This one will be no different. It is the perfect fall dessert. It is so easy to make and the ingredients are easily found at your local grocery store. You can whip this up in a few minutes and take it to a get together. This would be a nice addition to your Thanksgiving dessert table.

It is a no bake recipe and you can make it up in minutes. You can serve this in individual small glasses as dessert shooters if you would like. I like to serve this in small glasses because you don’t need a lot to be satisfied. If you serve this at a holiday meal, you will not feel like you are missing out on all of the old family favorites that are full of sugar. You can use 1/3 less fat cream cheese instead of the full fat version if you would like to reduce some of the calories in the recipe. It won’t change the texture of the recipe. Also, I used brown sugar swerve to give a little extra flavor but if you don’t have any, just add more of the sweetener that you do have. If you have some blackstrap molasses, you can add a very small amount to the cream cheese mixture, that will give it that brown sugar flavor. After you get everything mixed together, taste it and see if it needs more spice. I used 1 tsp of pumpkin spice and felt it was perfect. However you end up making it, I think you will love it.
Low Carb Pumpkin Mousse

Ingredients
- 1 1/2 C Heavy Cream
- 8 oz Block Cream Cheese, softened
- 7-8 oz Canned Pumpkin Puree
- 1/2 C Powdered Swerve, or alternative
- 2 T Brown Sugar Swerve
- 1 t Pumpkin Pie Spice
- 1 Pinch Salt
Topping: Whipped cream and pumpkin pie spice
Instructions
- Beat heavy cream until stiff peaks form.
- Scrape your whipped cream into a bowl. Add your cream cheese to the bowl and beat for about a minute.
- Add your pumpkin, spice, salt, and brown sugar alternative to the cream cheese mixture. Beat until combined. Scrape the bowl a few times to make sure everything is mixed well. Add the whipped cream to the cream cheese mixture and combine.
- Combine well.
- Serve in desired glass and top with whipped cream and pumpkin spice.
