Low Carb Garlic Cream Shrimp, THM S

Lemon garlic cream shrimp, another winner in my house.

So, it isn’t a secret that my family loves shrimp! My hubby doesn’t care for seafood or fish- he will eat salmon patties and shrimp and that’s it. I try to come up with new shrimp recipes that my family will love. This was a huge hit! When they know shrimp is on the menu, everyone gets excited.

You probably already have all of the ingredients in your house to make this shrimp recipe.

I am all about easy and fast. This recipe not only uses basic ingredients, it also comes together in 10 minutes. That’s one of the wonderful things about shrimp, it cooks so fast. If you overcook it, it becomes a bit rubbery. Uncooked shrimp is a little translucent and grayish. When it is cooked, it turned opaque and pinkish. You can add some heat to the dish with a few shakes of chili flakes. Add it to the garlic so it will flavor the whole dish.

Pasta options are increasing at my local stores.

Needing low carb pasta options is getting so much easier now. You can find spiralized veggies in the freezer section, if you don’t want to make your own. Spaghetti squash is one of my favorites. Shirataki noodles are making a huge splash now. I don’t have any experience with those but I have heard some good reviews. My last one that I know of are the palmini noodles. I really, really want to try those. On my next Costco trip, I am hoping I can find them. Do you have a favorite low carb pasta option?

Low Carb Lemon Garlic Cream Shrimp

Ingredients

  • 1 lb Shrimp, thawed, deveined and shells removed
  • 2 T Olive Oil
  • 2 T Butter, you can use all butter or olive oil if you want to use only one
  • 1 M-L Lemon, sliced into rings
  • 2 T Old Bay Seasoning
  • 1-2 T Minced Garlic
  • 1/2 C Stock, Dry White Wine, or Water
  • 1/4-1/2 C Heavy Cream, add as much as you want to make it as thin as you want.
  • Low Carb Pasta option of choice
  • Parsley to sprinkle on top

Salt and Pepper to taste

Instructions

  • In a large skillet over medium heat add the olive oil. Once the skillet is warm add the shrimp. Once the shrimp are cooked on one side flip. This should take 2-3 minutes.
  • Cook for another minute or so, until your shrimp are opaque and pink. Remove the shrimp from the skillet
  • Return the skillet to the heat and add the butter.
  • When the butter is melted, add the garlic. Cook the garlic for 2 minutes.
  • Add the Old Bay seasoning to the skillet and stir to combine.
  • Add your liquid and cream.
  • Cook for a minute or two.
  • Add the shrimp and the lemon. Cook for about a minute.
  • Serve over pasta of choice. Top with parsley.
