Kielbasa and Veggie Sheet Pan Dinner

This is one of those low carb, trim healthy mama dinners that you will make again and again.

If easy peazy lemon squeezy was a dish, this would be it! Kielbasa sheet pan dinner is so easy, yummy, and healthy. Talk about the perfect dinner for busy or slow days. This is one of those dinners that you can bring your younger kids into the kitchen and have them help you. Sheet pan dinners are one of my favorite dinners. They are so easy, so flavorful, and don’t require a lot of kitchen skills. Everyone could benefit from having these sort of recipes at their disposal.

Use your family favorite veggies in this dinner.

You can use whatever veggies you have in your fridge and pantry if you want. This can be one of those CORD meals, clean out refrigerator days. I love to pull out some kielbasa (or other sausage) and start pulling veggies out of my fridge that need to be used up. Here are some ideas to get you started: broccoli, cauliflower, asparagus, brussels sprouts, onion, bell pepper, zucchini, yellow squash, beets, carrots and more. Not low carb but still delicious, sweet potato and small potatoes. One tip, any veggies that take longer to cook, brussels sprouts, carrots, potatoes, should be cut smaller than the faster cooking veggies.

Keep this flavor profile simple or take it to a new level.

I use a lot of the same basic seasonings in my cooking. You can spice it up, give a different flavor profile, whatever floats your boat for the day. You can add some Tony Cachere’s or Old Bay Seasoning. You can make this dish your own. I keep the basic recipe the same but often tweak it a little different every time I make it. My kids can then pick out what veggies they want on their plates. This is one way to make everyone happy at dinner time. However you make this dish, I am sure your family will love it.

Kielbasa Sheet Pan Dinner

Servings 0

Ingredients

  • 12-16 oz Kielbasa, sliced
  • 3-6 C Desired Veggies, cut
  • 2 T Olive Oil
  • 1 T Minced Garlic
  • 1 t Salt
  • 1/2 t Black Pepper
  • 1 t Smoked Paprika
  • 1/2 t Dried Rosemary
  • Any other seasonings desired

Instructions

  • Preheat your oven to 400 degrees. Line a cookie sheet with parchment paper or foil. Put your veggies and meat on your pan. Add the seasonings and olive oil. Toss to coat.
  • Bake for 30 minutes. Take out of the oven and toss everything around. Place back in the oven for another 10-20 minutes.
  • Bake until your veggies are done to your liking.
  • Serve warm.

    Do you use fresh veggies vs frozen?

      I typically use fresh. You can try frozen and just keep an eye on them. I think they might cook a bit faster.
