I have been working on filling my freezer and making one for dinner this month. This is one of those simple recipes. I call these types of recipes dump recipes but that doesn’t sound appealing. It does describe it perfectly though. You dump everything in your crockpot, or freezer bag, and you’re done. How easy is that?
You can use this meat for tacos, taquitos, enchiladas, salads, and more!
This beef taco meat is versatile. Tacos with low carb tortillas are usually the first night. But this meat would make excellent beef enchiladas! I also made some taquitos. I used low carb tortillas and rolled them with the meat inside. I sprayed them with non-stick spray and air fried them for around 10 minutes. If your meat is warm, that will prevent the tortillas from getting burnt.
You can use your crockpot or pressure cooker.
I have a Ninja Foodi (affiliate link) and it makes things easier. Originally this was going to be a crockpot recipe, but we were running errands and were gone a lot longer than we had planned. I ended up having to use the pressure cooker. I cooked on high pressure for an hour with a quick release of pressure. If you have time, slow cook this roast all day. How ever you cook it, it will be delicious!!
Crockpot or Pressure Cooker Mexican Roast Tacos
Ingredients
- 2-3 Lb Roast
- 1 M Onion, Sliced
- 2 M Jalapenos, deseeded and chopped
- 1 M-L Tomato, Sliced
- 2 Bay Leaves, optional
- 1 t Ground Cumin
- 2 t Chili Powder
- 1 t Garlic Powder
- 1 t Garlic Powder
- 1 t Smoked Paprika
- 1 t Mexican Oregano
- 1 t Salt
- 1 t Black Pepper
- 2-3 C Beef Broth
- 2 T Minced Garlic
Instructions
- Place everything in your slow cooker or pressure cooker. Cook on low for around 8 hours or high for about 5 hours. Or pressure cook on high for 1 hour.
- When it is finished cooking, remove lid.
- Remove roast to shred. Remove bay leaves from liquid. Blend the liquid and veggies. I used a hand blender.
- Shred meat. You can add your meat to the liquid or remove some of the liquid and then add the meat. It might be too saucy if you don't remove some of the sauce.
- Serve as desired.
