Air Fryer Potatoes
Even though I follow the trim healthy mama eating plan, I can still have potatoes. We can’t go crazy with them but the purple, red, or waxy are on plan! I love to buy the little bag of baby medley potatoes at Aldi. They keep well in my pantry until I am ready to use them. They take no time at all to prepare and are finished in the air fryer in about 20 minutes. When I made them to go with my Mexican sliders I added some Mexican seasonings like chili powder and cumin, along with the other seasonings. Everyone loved them.
This is the bag I buy at Aldi. They have either 2 or 3 varieties of small potatoes. Red, yellow and purple are the most common ones where I live. I haven’t had many purple ones lately but when they are in there, that is what I put more of on my plate. If you eat a small portion, these will fit in an E.
Air Fryer Potatoes
Equipment
- Air Fryer
Ingredients
- 2/4 Bag of baby potatoes You can use the whole bag but I don't want to overcrowd the air fryer basket
- 1 T Olive Oil
- 3/4 t Salt
- 1/4 t Black Pepper
Optional: Sprinkle of garlic powder, onion powder or other seasonings that will go with your meal
Instructions
- Dice up your potatoes. It depends on the size whether I quarter them or cut them into 6 or 8 pieces.
- Place them in a bowl with your seasonings and toss to coat.
- Place in air fryer basket and cook at 400 for about 12 minutes. Take out toss around and place back in your air fryer until cooked through, approximately 8 more minutes.
- This is what they look like when they are finished.
- Allow to cool for a few minutes before serving them.
