Grilled Chicken with Black Bean and Mango Salsa THM E

I really wanted another grilling recipe to add to my collection. I have so many that are trim healthy mama s meals. I wanted a thm e recipe, I had 2 mangos, so I came up with this. It is similar to my grilled chicken with peach salsa. I remembered years ago making a salsa with fruit and beans in it. I thought I would make something similar that is perfect for summer.

As is typical for most recipes on my site, this is really easy to make and tastes great. You can make the salsa early in the day if you want and store in the fridge. You don’t have to grill the chicken, you can pan fry or bake in the oven. For me, if I don’t have to heat up my house right now, that’s a great meal.

For the chicken, you can season this with as much or as little as you want. If your family likes things hot, add some cayenne. I kept these on the mild side because I didn’t want to take away too much from the salsa. I loved the lightness of the dish on a hot day. If you don’t like mangoes, you can use another fruit like peaches or plums.. I like the mango but I know it isn’t everyone’s favorite.

Grilled Chicken with Black Bean and Mango Salsa

Ingredients

  • 2 Mangoes, diced
  • 1/4 C Cilantro
  • 1 M-L Jalapeno
  • 1 Sm-M Red Onion
  • 2 Cans Black Beans, Rinsed and drained
  • 1/4 t Of Each: Smoked Paprika, Cumin, and Chili Powder
  • 1 M Lime, juiced
  • 1/2 t Salt
  • 1.5 L Chicken Breasts

Seasonings for Chicken: I used the same group of seasonings in the salsa and a jalapeno seasoning as well.

Instructions

  • In a bowl add your mango.
  • Chop your cilantro and add it to the bowl.
  • Dice your onion and add it to the bowl.
  • Slice you jalapeno in half, deseed and remove the white membrane. Dice and add to the bowl.
  • Add your black beans and seasoning to the bowl.
  • Squeeze the lime juice over the bowl and toss to coat. Store in fridge.
  • Season your chicken and grill.
  • Turn your chicken so it doesn't burn.
  • Cook until your chicken is cooked through but not overcooked.
  • On a plate add about 1/4 of the black bean salsa. Top with sliced chicken.

    Thank you so very much for all these wonderful recipes! We’ve been making your June recipes every day, no stress about what to eat for dinner, I shop for 4 days at a time. They are easy, quick, filling, healthy and absolutely delicious. This one we just ate and everyone loved it, I increased the spices a little otherwise I follow your recipes to a T.

      Hi Melissa. Thank you for letting me know the recipe wasn’t there. Sometimes my plug-in causes my site to glitch and the actual recipe disappears. The recipe is there now.
