Bacon Tacos, Easy and Yummy!

National Bacon Day!!

National bacon day is a thing. I had no clue! In honor of national bacon day, I made a breakfast using bacon. Well, this can honestly be a lunch or dinner recipe as well. This recipe is low carb, trim healthy mama s. You can use whatever on plan tortillas that you want. If I don’t have anything homemade, I really like Mission’s low carb tortillas. That is what I used in the pictures on this post.

As written, this recipe is super basic and easy.

Sometimes, basic and easy is exactly what we need in our lives. This is perfect for days when you don’t know what to make, need to feed the family in 10 minutes, or even on a camping trip. Bacon is pretty expensive right now, so I used just enough for the flavor but you can feel free to add more. If you have a larger family, double the recipe.

Depending on what your family’s tastes are, you can spice this up.

You can add jalapenos, fresh or pickled, hot sauce, or whatever your family might like to give it some heat. To save a little calories, you can use 3 whole eggs and 3 eggs equivalent of egg whites. You can add some chili powder and cumin to the scrambled eggs. My goal was to make something super simple and you can add your own flair to it. I would highly suggest fresh pico de gallo, but that is going to add to your meal prep.

Low Carb Bacon Tacos

Ingredients

  • 3 Pieces of Bacon
  • 6 Eggs, whisked
  • 1/4-1/2 C Shredded Cheese, I used quesadilla
  • 1/2-1 C Salsa
  • 6 Low Carb Tortillas
  • 1/4 t Salt
  • 1/4 t Pepper

Taco Toppers: Avocados, Guacamole, Cilantro, Green Onions, Jalapenos, Diced Bell Peppers, , Sour Cream, Pico de Gallo

Instructions

  • In a medium to large skillet place your bacon. Cook until it the bacon is cooked through.
  • Remove bacon to a paper towel to drain and dry.
  • Whisk the eggs and add the salt and pepper. Remove most of the fat in the skillet left by the bacon. I reserved close to a tablespoon. Pour in whisked and cook over medium heat.
  • Break up your bacon into small pieces.
  • When the eggs are almost cooked through, add the bacon to the eggs.
  • Mix to combine the two. Remove from heat when it is cooked to your liking.
  • Place your cheese into the tortilla.
  • Place egg mixture on top of the cheese. Add the rest of the ingredients desired.
  • Eat.
