This easy and delicious Carne Guisada is low carb and trim healthy mama s.

It is also a crockpot recipe and so full of flavor!! Transform Taco Tuesday into a more authentic taco night. The flavors in this crockpot carne guisada are so on point to what I get at our local taqueria. Carne guisada means beef stew. With this recipe we make it pretty much like our local restaurants but we make a substitute to keep low carb, trim healthy mama friendly.

This carne guisada recipe features beef chunks, simmered with onions, bell peppers, and seasonings.

You end up with a nice gravy. You can spice this up, of course. I kept it mild so everyone could eat this. We had this after our local Christmas parade and had some extra family over. Because carne guisada is so versatile you have options on how you want to serve it. You can serve it with tortillas (I used zero carb), on top of Spanish rice (this recipe is always a hit with my picky family), over salad greens. Make some homemade pico to go with it. Here is another option or you could serve any leftovers like this.

Carne guisada is made with beef chunks.

I rarely find beef stew on sale. Typically, when I need chunks of beef, I like to use either a roast or beef sirloin. My local grocery store has meet buy get one almost every week. I then just cut them up into chunks. This is finished in a slow cooker (I used my ninja foodi so it was a one pot dinner for me). This recipe is seriously delicious and easy. Carne Guisada- Low Carb and THM S

Ingredients

  • 2 Lb Beef cut into bite size chunks
  • 2 M-L Onions, cut into chunkcs, they don't have to be diced
  • 1 M-L Bell Peppers, cut into chunks, they don't have to be diced
  • 2 T Minced Garlic
  • 2 t Ground Cumin
  • 1 t Salt
  • 3/4 t Black Pepper
  • 8 oz Can Tomato Sauce
  • 1/2 C Broth or Water
  • 1-2 t Teaspoons Xanthan Gum

All of your desired toppings

    Instructions

    • Cut up your beef, onions, and bell peppers.
    • Place in a large skillet or your multi-function cooker, like a foodi or instant pot. Add 1 tablespoon of fat as well. Start browning of medium to medium high heat.
    • Add your seasonings, garlic, and tomato sauce.
    • After cooking and browning, transfer to your crockpot. Add the broth. Cook on low 4-6 hours or high for 2-3 hours.
    • After cooking for your time, it should look like this.
    • Sprinkle the xanthan gum on top. Stir/whisk the best you can so there are no lumps.
    • It should look like this, nice and thick, but not too thick.
    • Serve hot however you like.
