This crockpot chicken with creamy sun-dried tomato sauce is low carb, trim healthy mama s, and one of the easiest recipes ever.
This was one of those recipes created out of desperation. I had planned a different recipe but forgot 2 important ingredients. I saw the bottle of half used sun-dried tomatoes, and this recipe was born. I am so glad I made this. It was one of the easiest recipes ever and tastes amazing!! Put this on your menu asap.
I used this brand of sun-dried tomatoes.
I drained some of the oil off of the tomatoes and just dumped it on the chicken. You can keep the oil if you want. I didn’t drain it completely, just poured off the excess. I would recommend one that is similar to this one. If you can’t find one with herbs, just add a little bit extra of the seasonings.
You can choose to slice your chicken, dice it, or shred it.
You can also choose to make it saucier as well. I wanted to serve this over on plan pasta or mashed cauliflower. I ended up adding a little heavy cream and more chicken broth at the end. You can also add a little xanthan gum if you want it thicker. I ended up serving it over dreamfields pasta and we didn’t need it thicker. This recipe is so simple and easy, add it to any menu, you won’t regret it.
Here is where I prepped it with other meals. I prepped it straight in the crockpot for the next day.
Crockpot Chicken with Creamy Sun-Dried Tomato Sauce
Ingredients
- 2 Lb Chicken Breasts or Thighs
- 1 C Chicken Broth I added about 1/4 cup more at the end
- 8 oz Cream Cheese I used 1/3 less fat
- 1 T Minced Garlic
- 1 1/2 t Salt
- 3/4 t Pepper
- 1/2 T Italian Seasoning
- 1/3 C Sun Dried Tomatoes
- 1/4 C Heavy Cream
Instructions
- Cover the chicken with the salt, pepper, and Italian Seasoning. Pour the sun-dried tomatoes and the minced garlic on top.
- Pour chicken broth on top. Cube the cream cheese and place on top of the chicken.
- Cook on low for 5-6 hours or on high 3ish hours. I took out the biggest chicken breast and cut it in half to make sure it was done. If you use chicken thighs, I would check their doneness a earlier than the time suggested.
- Take chicken out and let it cool a little bit. If you wanted to thicken it, now is the time.
- Slice, cube, or shred your chicken.
- Stir the sauce. Add the heavy cream and additional chicken broth if desired. Add the chicken back to the sauce. Taste it and add more seasoning if you think it needs it. I added some red pepper flakes to ours.
- Serve with the sauce however you want.
