Crockpot Italian Sausage, Peppers and Onions

Low carb crockpot sausage, peppers, and onions is a great filling meal with very little work.

I came up with this recipe because I needed a crockpot recipe that was easy. I love to prep my dinners to make my weeks so much easier. Browned chunks of Italian sausage, sautéed onions, peppers, and garlic are put in a crockpot with an on plan marinara sauce and cooked for a few hours. The end result is something you would get at an Italian restaurant. My family loved it! This is truly an amazing and easy weeknight meal.

You can serve this on top of whatever pasta or pasta substitute you like.

My hubby’s choice is always dreamfields but that might not be an option for you. Spaghetti squash is one of my favorite low carb pasta substitutes and then zoodles. I love getting an extra veggie in when I use either of those options. To make this even easier, you don’t have to brown your sausage or peppers. I like to do that for a little flavor and I don’t want my peppers or onions to be firm when I eat them. You can just dump everything into your crockpot if that’s what you want to do and don’t mind a little bite to your veggies.

When I meal prep, I literally take the meat package from the freezer (unless I just bought the meat) and put it in my plastic tote.

In the video below I share how I did my meal prep one weekend. When I meal prep, I have no excuse to not stay on plan. I prepped 7 breakfast porridges, 10 smoothie bags, 5 crockpot dinners, two sweet potatoes, salad for the week, and a batch of bars. My biggest tip if you meal prep, don’t stop at one time, keep up the momentum. I suggest at least 2 weekends a month, or more. This is truly life changing for me. I go from a stressed, eating cheat meals mom, to one is much less stressed and eating healthy food with no excuses. If you have any questions, feel free to send me a message.

Crockpot Italian Sausage, Peppers, and Onions

Ingredients

  • 1 Package Italian Sausage Links
  • 1 Med-Lar Onion, sliced
  • 1 Med-Lar Bell Pepper, cut into strips
  • 1 T Minced Garlic
  • 1 t Italian Seasoning
  • 24 oz Jar Marinara Sauce
  • Parmesan Cheese for topping
  • Noodles of choice
  • 1-2 T Olive Oil

Instructions

  • Cut sausage into chunks. In a large skillet add 1 tablespoon of the olive oil. Over medium heat, cut sausage into chunks and brown. Place into crockpot.
  • Add the second tablespoon of olive oil to skillet and cook the onion and peppers to your preferred doneness. You don't need to cook them all the way because they will cook in the crockpot.
  • Add the garlic and cook for about 1 minute.
  • Add to the crockpot. Pour marinara sauce on top and add the Italian seasoning.
  • Cook on low for 3-4 hours.
  • Serve over on plan pasta of choice.
