Kielbasa and Veggie Skillet, Low Carb and THM S

We all need easy and delicious meals in our lives.

This recipe is exactly that. Kielbasa, or really any precooked sausage is perfect in this dish. When my Costco has it on sale, I buy it. This type of sausage is perfect for so many meals, but especially quick meals. I love to use it in my hobo packs. If you have a busy week, or just want to be done with dinner, make this recipe. It was a huge hit with my family, no leftovers!

If you have some veggies in the fridge that you need to use up, they might be perfect in this dish.

I buy the pack of yellow squash and zucchini when I go to Costco. I never know what I am going to do with all of them. This ended up being a perfect way to use them. The sausage provides enough flavor that my boy that doesn’t care for them, ate this dinner. I don’t see why you couldn’t add mushrooms or another veggie like eggplant. As long as you don’t use veggies that take a long time to cook, you should be finished within 15 minutes. Life can be complicated at times, dinner shouldn’t be.

In this skillet recipe I used the small, baby bell peppers.

If you are new here, I don’t care for bell peppers. When I do cook them, I want them completely cooked. If you love bell peppers, use a large bell pepper and don’t cook it until it is well cooked. I really like the small ones in dishes. They aren’t overpowering and cook quickly. For this recipe to be finished within 15 minutes, make sure your veggies aren’t diced too large. Add some heat, like Tony Cachere’s seasoning or pepper flakes. Those of us who like heat, add it to our bowls since not everyone can handle it. This easy dinner will not heat up your kitchen and get you out of there in not time.

Kielbasa and Veggie Skillet

Ingredients

  • 12-16 oz Kielbasa or Similar Sausage, sliced
  • 1 Med Onion, diced
  • 4-8 Mini Peppers, diced
  • 2 T Minced Garlic
  • 1-2 T Olive Oil
  • 2 Sm-Med Yellow Squash, diced
  • 2 Sm-Med Zucchini, diced
  • Parmesan Cheese for topping

Instructions

  • In a large skillet over medium heat, add your onion. Sauté for a few minutes.
  • Add minced garlic and cook for about 1 minute.
  • Add mini bell peppers to the skillet and cook for another minute.
  • Add sausage and cook for about 2-3 minutes.
  • Add veggies and cook for approximately 5 minutes.
  • When veggies are cooked to your preference taste and add salt and pepper to taste.
  • Add to bowls and top with parmesan cheese and any spicy seasonings you like.
