These delicious crockpot pulled pork tacos are trim healthy mama s and couldn’t be easier!!
This is another one of those “recipes” that isn’t really a recipe. But I know that having what I did written down is helpful for people. I had planned on making pulled pork sandwiches but we went with tacos instead. And, they turned out perfect!! I am going to make this part of my fill your freezer Friday series. It was that good and simple to make.
I served my hubby’s over the 25 calorie corn tortillas that we love.
If you want to keep this an s, use low carb tortillas. You can also us very lean pork tenderloin and this would be a fuel pull since no fat is added to the cooking. Then you can go any direction you want to go. The cilantro lime coleslaw is also a trim healthy mama fuel pull. I like to try to keep some things light, since I definitely eat plenty of heavy s meals.
A couple of notes and then I will share how I made it.
Depending on the size of your family, as written, this will serve 4 adults. Serve the shredded pork however you want. You can make tacos, sandwiches, serve over mashed veggies, with eggs, stuff a sweet potato are a few ideas. The bbq sauce I used is G Hughes. I like his sweet and spicy. Use your favorite bbq sauce. And, finally, please excuse my pictures. I literally am cooking and making these for my family while trying to take pictures. Last night was a huge rush. We had the Dr visit at 5 and got home after 6. Hubby was getting up at 2, so I wash rushing around like a mad woman, trying to get dinner finished so he could go to bed.
BBQ Pork Tacos
Ingredients
- 1 1/2 Lb Pork Tenderloin
- 3/4 t Salt
- 1/2 t Pepper
- 1/2 t Onion Powder
- 3/4 t Garlic Powder
- 3/4 t Smoked Paprika
- 1/2 t Chili Powder
- Sugar-free BBQ sauce
Instructions
- Season pork with the seasoning. Cook on low about 4 hours.
- Remove pork and shred, dice the meat into desired size pieces.
- Add the amount of BBQ sauce you want. I used at least 1/4 cup.
- Serve as desired. We had tacos the first night.
