Easiest and Amazing Low Carb Chocolate Chip Cookies
Do you need an easy, simple, delicious low carb, trim healthy mama s, chocolate chip cookie in your life? That’s a silly question, of course you do!!
I used to be known for my delicious bad for you desserts. I even had a cookie business. This cookie is the easiest cookie recipe I have ever made. This recipe is even easier than the no bake chocolate oatmeal drop cookies. There is no creaming of ingredients in this chocolate chip cookie. I didn’t even sift my almond flour! It really is that easy.
This chocolate chip cookie was actually being made as a dough for ice cream.
I have been wanting to come up with some new ice cream flavors and a new, lighter ice cream. The only recipe I have on here is very heavy. Don’t get me wrong, it’s delicious. My hubby who is a lover of all things Blue Bell will actually eat my ice cream. If you are new around here, my hubby is very hard to please when it comes to low carb, trim healthy mama desserts. I have tried to make low carb, thm s chocolate chip cookies before and they were good, but not good enough to put on here.
These really surprised me, especially since I was going for a dough and not a cookie. I don’t know how many cookies this will make. I would guess at least 12. If you are feeding a lot, or just want to have some guilt free cookies, double the recipe. I only bakes these cookies for 8 minutes and let them rest for a few minutes on the tray. They turned out soft and perfect. If you want them a bit firmer, bake for 10 minutes. These are the sweeteners I used, you can use whatever you have. I was out of my swerve but had these in my pantry. If you don’t have a brown sugar option, use a drop or two of molasses.
Easiest and Delicious Low Carb Chocolate Chip Cooke
Ingredients
- 1 C Almond Flour
- 1/4 C Sugar free chocolate chips, I used Lily's
- 1 T Sweetener
- 1 T Brown Sugar Alternative
- 3 T Browned Butter see notes in recipe
- 1 t Vanilla
- 1/8 t Baking Soda
- 2 Pinches Salt
- 1/4 t Xanthan Gum optional
- 1 Med Egg, beat well
Instructions
- In a small saucepan, over medium low heat, melt your butter. It will take a couple minutes and it goes from melted to burnt fairly quickly, so keep an eye on it.
- While you are melting the butter, add all of the dry ingredients to a medium bowl.
- Mix well, making sure you don't have any baking soda clumps.
- Once your butter is brown, add the butter and vanilla to the dry ingredients.
- Mix well and then add the beaten egg.
- Add the chocolate chips.
- In an oven preheated to 325, take about a tablespoon of the dough and form into balls. Place on a parchment paper lined cookie sheet. flatten a little. They don't seem to spread much during baking. Bake for 8 minutes.
- Take out of the oven a let cool. Once cooled some, eat that cookie.
