Low Carb Mexican Pizza – THM S Recipe
Ingredients
- 1 lb ground beef
- ½ onion, diced
- 1 packet (or homemade) taco seasoning
- 2–3 tablespoons Taco Bell Mexican Pizza Dip or enchilada sauce
- Low-carb tortillas (Mission Zero Carb, Carb Balance, etc.)
- Refried beans (optional – smear lightly to stay THM S-friendly)
- Shredded Mexican blend cheese
- Additional sauce for topping (Mexican Pizza Dip or enchilada sauce)
- Optional toppings: diced tomatoes, sliced green onions, black olives
Instructions
1. Cook the Ground Beef
Brown the ground beef and diced onion in a skillet. Drain, if needed.
Stir in the taco seasoning and 2–3 tablespoons of Taco Bell Mexican Pizza Dip (or enchilada sauce). Let simmer a couple of minutes to blend flavors.
2. Crisp the Low-Carb Tortillas
Choose your method. I sprayed both sides lightly with cooking spray:
- Air Fryer: 375°F for 3–5 minutes
- Oven: 400°F for 4–6 minutes
- Skillet: Lightly spray and cook until golden and crisp
They should be sturdy enough to hold the layers without getting soggy.
3. Assemble the Mexican Pizzas
Place one crisp tortilla on a lined baking sheet.
- Spread a thin layer of refried beans (optional).
- Add the seasoned beef.
- Sprinkle with cheese.
- Top with the second crisp tortilla.
- Spread the top with sauce.
- Add another sprinkle of cheese.
4. Bake

Low Carb Mexican Pizza
Ingredients
- 1 lb Ground Beef
- 1/2 `M Onion, chopped
- Enchilada or Pizza Sauce
- 8 Low Carb tortillas
- 2 C Shredded cheese, use as much or as little as you want
Desired Toppings: For the classis diced tomatoes, green onions, and black olives. Extra: Sour cream, guacamole, pico, jalapenos
- 1 Pkt Taco Seasoing, or your own mix
Instructions
- Brown meat in skillet, add onion and taco seasonings. Add about 3 tablespoons of sauce. Taste and add more sauce or seasonings if you think it needs it. While you are cooking your ground beef, crisp your tortillas. They get crisp fairly quickly, so keep an eye on them. Also, if you use an air fryer, they might fly around and bend. I continually opened ours and made sure they were flat. I also flipped them.

- Start assembling your pizzas. If desired, smear with warm refired beans. If they aren't warm, your tortilla might break.

- Top with taco meat.

- Top with desired amount of cheese.

- Top with the second tortilla, sauce, and then more cheese.

- Bake at 400 degrees for 5-10 minutes.

- Top as desired.

- Cut into fourths.
