This pizza soup is so easy to make and will be a hit with your family!
This pizza soup is a hearty Italian meal in a bowl! It is full of delicious flavors and so easy to make. Even though it is low carb, trim healthy mama s, it doesn’t sacrifice on flavors. The soup is creamy and loaded with sausage and pepperoni. This is perfect simmering in your crockpot all day or made last minute in a stockpot on your stovetop.
Soup is such a comforting meal, perfect for fall and potlucks. It is also really easy to make. This pizza soup, that fits in a low carb diet or as a trim healthy mama s, is exactly that! And it can be adapted to your family’s tastes. My kids loved this so much, there weren’t any leftovers! If they don’t like some of the ingredients, leave them out or have a few small bowls where they can add in what they want.

This is so easy and so good that it will be a definite cool weather meal added in on a regular rotation. I used the great value brand of marinara and it worked perfectly. I feel Rao’s tastes great, but it costs so much. You use whatever marinara/pasta sauce you like and can afford. Just make this soup, you will love it!!

Amazing Pizza Soup
Ingredients
- 1 lb Italian Sausage You can use ground beef uut you might need more seasonings
- Olive oil for sautéing
- 3.5 oz Pepperoni
- 24 oz Marinara
- 8 oz Sliced Fresh Mushrooms
- 1 S-M Onion
- 4-6 Small Bell Peppers You can use a regular bell pepper, I just had the little ones and don't care for bell peppers
- 1 T Minced Garlic
- 1/2 t Black Pepper
- 1 t Salt
- 2 t Italian Seasoning
- 2-4 C Beef broth It depends on how soupy you want it
- 8 oz Reduced Fat Cream Cheese
Toppings: Mozzarella, sliced olives, parmesan cheese, red pepper flakes, etc.
Instructions
- In a skillet (or soup pot if not using a crockpot) add some olive oil and your onions and bell peppers.
- Cook until softened.
- Add your garlic. Cook for a minute or two and then add your Italian sausage.
- Chop the pepperoni into bite sized pieces.
- Brown the meat.
- Once browned, add your pepperoni and seasonings.
- Stir and cook for about a minute.
- Add marinara. Stir. Add 2 cups of beef broth.
- If you are cooking for a couple hours, go ahead and add your cream cheese. I don't like to let my cream cheese cook for 8 hours. It's up to you when you add it in.
- Cook for 2-3 hour on high, 4-6 on low. Stir. I add my cream cheese about 1 hour before serving.
- Stir. Add more broth if you think it needs it. I added 4 cups. Taste and add more seasonings if desired.
- Serve with desired toppings.
Where do the mushrooms come in? I see them on the ingredients list but don’t see them used in the recipe?
You can add them with the marinara. If you are using fresh and want them cooked more (that is my preference), add them when you are sauteing the veggies.
