This is such a simple coleslaw. Although, I guess most coleslaw recipes are easy, but this one was the easiest I have ever made. We had it two nights in a row. The first night I served the coleslaw on top of these BBQ pork tacos. It was perfect! Last night I served it as a side with Mexican Chicken Cheesy Pasta. This is such a perfect side, especially for Mexican dishes.

Here’s how I kept the coleslaw a trim healthy mama fuel pull.

I used blended cottage cheese and mayonnaise. If you don’t want to use blended cottage cheese, just use all mayonnaise. It might not be a fuel pull, you would need to look at the numbers and see what they whole recipe ends up being. You could probably use non-fat Greek yogurt in place of the blended cottage cheese, if you want to keep this a fuel pull.

When I made this, I didn’t realize it was going to be so good, so I only have 1 picture.

This is also a great side because you can make this in just a few minutes. We had a really busy day with a small window for dinner. The BBQ pork tacos and the cilantro lime coleslaw came together in less than 15 minutes. This is the perfect combo for busy days. The flavor combination is so good! I am adding this to my fill your freezer Fridays series. We all could use super simple and delicious recipes in our lives.

Cilantro Lime Coleslaw- Trim Healthy Mama FP

Ingredients

  • 16 oz Package Bagged Coleslaw
  • 1/2 t Salt
  • 1/2 t Pepper
  • 1/2 t Garlic Powder
  • 1/2 t Ground Cumin
  • 1/2 Bunch Cilantro, chopped
  • 1/4-1/2` C Chopped Onion
  • 2 T Mayonnaise
  • 2 T Blended Cottage Cheese
  • 2 T Lime Juice
  • 1 T Apple Cider Vinegar

Optional: Small amount of sweetener and 1 chopped jalapeno

Instructions

  • Combine everything in a bowl and mix to combine. Taste and adjust as needed. I also pick out the big pieces of cabbage.
  • Serve as desired.
