Easy High Protein Pancakes- Trim Healthy Mama E

These pancakes are so easy to make!! They need only a few ingredients and come together so fast. I try to keep basic ingredients on hand so I can make things like this on the spur of the moment. If you start with blended cottage cheese, you don’t have to blend the recipe, but I wanted the oats to be a lot finer.

Using the mini blender made things easier!

By blending everything in the little blender, it is the easiest pancake recipe. This recipe serves 2. You can share, cut the recipe in half, or use it for meal prep. I have 4 pancakes in my fridge for another meal this week. I topped with some air fried berries and sugar-free syrup from Walmart.

Here is how I made the berries

I have a recipe for roasted strawberries. I didn’t want to turn my oven on. I used my Ninja to air fry the berries. I air fried at 370 for about 15 minutes. I tossed with a little gentle sweet and vanilla. I stirred twice. They turned out great and I didn’t even have to turn my oven on.

Ingredients

  • 1/2 C Oats
  • 1/2 C Cottage Cheese
  • 1/2 C Egg Whites
  • 1/2 C Milk, I used cashew milk
  • 1 t Baking powder, optional
  • 2 Pinches Salt
  • 1 t Vanilla
  • 2 Scoops Vanilla Protein Powder

Instructions

  • I blended my oats first because I didn't want texture from the oats in the pancakes. You can skip this step if you want. Blend or mix everything
  • In a skillet or griddle over medium-low heat, spray with non-stick spray. and pour in your pancake into circles. I made pancakes with my mix. The pancakes puffed and then fell slightly flat. I plan to experiment a bit and see if I can get them puffier.
  • Serve as desired.
