Easy Mushroom Garlic Pork Bites: Low Carb and Trim Healthy Mama S

These garlic mushroom pork bites are low carb, trim healthy mama s and super easy to make!

It’s hot here and turning the oven on just isn’t an option right now. I need easy and oven free. Oh, and budget friendly. This is a skillet meal that you can add to or take away whatever you want. I have one kid who doesn’t like mushrooms, so he just picks over them and leaves them for us. Use whatever sides your family will eat. The kids had instant mashed potatoes and air fried green beans. Hubby and I had a side salad and green beans.

Use whatever cut of pork you can find on sale.

My local grocery store has some sort of meat on sale almost every week. I often get the pork tenderloin packages when they are on sale for buy one get one free. But you don’t have to use a tenderloin. If you have a package of pork chops in the bottom of the freezer and you don’t know what to do them, cube them up and make this recipe. You definitely don’t need a special cut of meat for this recipe.

This recipe is so easy and adaptable.

If your family doesn’t like mushrooms, leave them out. Not big on garlic? Reduce the amount or leave it out. Do they like spicey, add some heat. There is so much play in this recipe that you could change it up and serve it twice in a month! This is also a pretty fast recipe to make. This is great for busy nights or nights you just want a delicious dinner fast.

Mushroom Garlic Pork Bites

Ingredients

  • 1 1/2-2 Lb Pork, cubed
  • 8 oz Mushrooms, sliced
  • 1 M-L Onion, chopped
  • 2 T Butter, additional butter as needed
  • 1-2 T Minced Garlic
  • 1 t Salt
  • 1/2 t Pepper
  • 1 t Smoked Paprika
  • 1/2 t Garlic Powder
  • 1/2 t Worcestershire
  • 1/3 C Heavy Cream
  • 1/3 C Parmesan Cheese

Instructions

  • In a large skillet over medium heat add 2 tablespoons of butter. Add the diced onion on top and sauté.
  • Add garlic and cook for about a minute.
  • Add the diced pork. If you feel it needs it, add another tablespoon of butter.
  • Cook until almost cooked through. Pork is one meat that I make sure it is properly cooked. Add the mushrooms.
  • Stir and cook for a few minutes. Add the seasonings and stir.
  • Stir and cook. When the mushrooms and pork bites are done, add the cream.
  • Add the parmesan cheese and stir. Taste and add more seasonings if you think it needs more.
  • Serve with desired sides.
