Fiesta Omelet

Who doesn’t need a little fiesta in their life?

This fiesta omelet is a party on a plate. It is low carb, trim healthy mama s. I made this one morning when I was craving Mexican food. This recipe if full flavor, healthy ingredients, and boost your metabolism. Bell peppers are amazing for you. I don’t really like them but because they are so good for me, I try to eat them at least once a week. If you don’t care for bell peppers, my trick is to cook them before adding them to things. I don’t want them crispy at all.

If you aren’t great at making omelets, I am not either.

I am really surprised this didn’t turn into fiesta scrambled eggs. The taste is great however it ends up. If you don’t like heat or jalapenos but really like bell peppers, feel free to adjust, leave out, add more of any pepper you want. You do want some sort of pepper in here to get the benefits of the metabolism boost of the pepper family.

It isn’t the prettiest omelet but it tasted great!!

Fill your omelet with any Mexican inspired ingredients. I did lighten this up by using 2 eggs and 1 egg equivalent of an egg white. I used light laughing cow cheese as well to keep it a little lighter and add some creaminess. I also added some nutritional yeast for a little flavor and extra nutrition, but that is an optional ingredient. Play with this and make it your own. And if you end up with scrambled eggs, it still tastes just as good.

Fiesta Omelet

Ingredients

  • 2 Eggs, scrambled
  • 1 Egg white amount equivalent to a whole egg
  • 2 Sm Bell Peppers, the really small ones that come on a bag
  • 1 Wedge Light laughing cow cheese
  • 1/2 T Olive Oil
  • 1/2 t Minced Garlic, optional
  • 2 Slices Pickled Jalapenos, chopped
  • Salt and Pepper to taste
  • Part of a green onion, chopped
  • Sprinkle Nutritional yeast
  • Shredded Cheddar to top the omelet with

Any Extra Filling Ingredients: Avocado, Cilantro, Salsa, etc

Instructions

  • In a small to medium skillet over medium heat, add olive oil and chopped bell pepper.
  • Add minced garlic and cook for another minute.
  • Remove from skillet. If you need to add a little more oil, add it before adding the eggs.. Add the beaten eggs and egg white to the skillet. Top with the bell pepper mixture.
  • Add llcc, diced jalapeno, and green onion.. Lifting the edges of the eggs and allowing the uncooked egg to go to the edge of the pan to cook. Add a little salt and pepper and any other fillings you want to add..
  • When mostly cooked carefully flip half over to make a half circle. I like to flip to the other side as well to make sure there are no uncooked egg whites.
  • Plate it. Sprinkle some nutritional yeast and some shredded cheese.
