Instant Pot Low Carb Chili

I already have a chili recipe on here but it might be too weird for most people. This one isn’t quite so weird. This recipe uses basic ingredients with one optional ingredient. Since I really like to eat on the cheap, and generally speaking, using 2 lb of ground beef isn’t cheap, I buy a few when they are on sale. This way, my freezer generally has meat stocked in it.

If you don’t have an instant pot, you can do all of this on the stove. You will need to simmer until you think it is done, I would guess 45 minutes. If you have a crockpot, you can brown your meat in a skillet and then add everything to your crockpot and let it cook all day.

This chili is so good. You can always add chopped bell pepper, celery or any other ingredients you think would be great in chili. I am from Texas and like this chili as is. Also, not all chili powder is created equal. I have had some that were potent and even some that had a decent amount of heat to it. I suggest between 1 1/2 T to 1/4 C chili powder. This is based on the chili powder that you have and what your family likes.

Equipment

  • Instant Pot or Crockpot

Ingredients

  • 2 Lb Ground Beef
  • 1 Large Onion, diced
  • 1 Tbl Minced Garlic
  • 1 28 oz Can Crushed Tomatoes
  • 1 14.5 oz Can Diced Tomatoes
  • 1 10 oz Can Diced Tomatoes and Green Chilies
  • 1 1/2 tsp Salt
  • 3/4 tsp Black Pepper
  • 4+ Shakes Cayenne Pepper this is optional
  • 1 1/2 Tbl Chili Powder, more if your chili powder is mild
  • 1 1/2 tsp Ground Cumin
  • 1/8 tsp Pure Stevia extract, if desired
  • 1 Tbl Unsweetened Cocoa Powder, optional

Instructions

  • Turn your instant pot to saute.
  • Add ground beef to the pot and brown the meat.
  • After it is browned, add onion and garlic. Rinse your meat if it was fatty.
  • Add your seasonings and stir. Allow to cook for about a minute.
  • Add the tomato products and stir.
  • Place lid on top and lock in place. Place valve to the closed position. Push the soup/chili button and set the time to 30 minutes.
  • When the time is up, remove the lid. Stir. Serve hot but not right away. I allow it cool for about 5 minutes.
