Lemon Mousse- Low Carb, Trim Healthy Mama S

These low carb, thm s mousse recipes are so incredibly easy to make and taste so good!!

I love when you take simple ingredients and make something so yummy!!! This is one of those recipes. Very few ingredients needed and the result is a delicious sugar free dessert. All of my mousse recipes are generally the same base. Just heavy cream, sweetener, cream cheese, an extract and then something a little different ingredient to change it up. This lemon one is so good and simple.

This turned out perfect, light and fluffy and lemony.

This recipe used one whole large lemon but I felt it needed more lemon flavor. I used about a 1/4ish teaspoon of pure lemon extract to boost the flavor. You can use lemon essential oil is you want to use that instead. I also used 1/3 less fat cream cheese in this recipe. You can use full fat if you want, the flavor or texture doesn’t really change. I have used both in my various mousse recipes. Make sure you use room temperature cream cheese. You don’t want clumps of cream cheese left in your final product.

This sugar free lemon mousse is super light and perfect for the spring and summer.

I have been trying to find some recipes for our Easter celebration coming up. My hubby and step-mom both love lemon desserts. So I bought a bag of lemons from Costco and have been experimenting. This recipe will be at our Easter lunch for sure. It is so cheap and easy to make, I won’t save this just for special occasions. If you like lemon desserts, give this one a try, it might become your new favorite.

Lemon Mousse, Low carb, THM S

Ingredients

  • 1 C Heavy Cream
  • 8 oz Block of cream cheese, softened
  • 1 Lrg Lemon, peel grated and lemon juiced
  • 1/4-1/2 C Powdered Sweetener, I used Swerve confectioners
  • 1/4-1 t Lemon Extract, optional

Instructions

  • Beat the heavy cream until thickened and holds a shape. This is what mine looks like.
  • Scrape out your whipped cream. Add your cream cheese and beat until soft.
  • Add the lemon juice, rind, pinch of salt and sweetener. Beat together. Add the whipped cream and mix together.
  • Taste and add lemon extract if you think it needs more lemon flavor.
  • Serve with a little whipped cream on top and a small sprinkle of grated lemon rind, if desired. Store in fridge.
