Low Carb Asian Cucumbers

Need a low carb, trim healthy mama side dish with an Asian flavor?

These cucumbers are so easy to make. I wanted something to serve with my Filipino chicken recipe. These were perfect! The family members in my house that like cucumbers loved this side. It was so simple to make and only needed a few ingredients. You can make this in minutes!

You only need 4 ingredients!

If you have a cucumber, vinegar, sesame seed oil, and on plan sweetener, you can make this side dish. It went perfect with the Filipino chicken. I plan on making this when we have Asian flavored foods. It’s easy, cheap, and healthy. You can get this made in less than 5 minutes! You can use rice vinegar, or whatever vinegar you have. I used apple cider vinegar.

Let’s talk fat.

If you are low carb, this part doesn’t really matter to you, jump to the recipe. If you are a thmer, this recipe has 1 teaspoon of fat. As written, this recipe serves 2-4. Depending on how much you eat, you are either getting 1/2-1/4 of a teaspoon. If you are serving this with an e meal, make sure take into consideration the amount of fat in that meal as well. Or, you might not care about the possible 1/4-1/2 a teaspoon that is in this recipe.

Asian Cucumber Salad

Ingredients

  • 1 Cucumber, sliced
  • 2 T Vinegar, I used apple cider
  • 1 t Sesame seed oil
  • 1 1/2 t Sweetener, I used swerve

Instructions

  • Mix everything except the cucumber. Pour over cucumber. Store in fridge.
