Low Carb Chicken Bacon Ranch Casserole

This is my favorite new recipe. I was so happy with how it turned out. Everyone in my family loved it. It is similar to crack chicken but this beats my crack chicken. I like to use real bacon pieces in place of cooking it myself. You can bake, grill, or skillet “fry” your chicken breasts. It is grilling season where I am but it is so hot, I didn’t want to stand outside and sweat and cook the chicken.

This is a trim healthy mama s recipe that requires no special ingredients. Like so many of the recipes on my blog, my family ate this all up the first night I made this. I made them mashed potatoes to serve theirs on top of. Low carb options would be mashed cauliflower or noodle alternatives. When you make the sauce, slowly add enough chicken broth to make a thick sauce that gives you enough sauce so you can serve it on top of your low carb base of choice. Make it this week and you won’t be disappointed.

Low Carb Bacon Ranch Casserole

Servings 0

Ingredients

  • 2 Lb Chicken Breasts, diced
  • 1 t Salt
  • 1/2 t Black Pepper
  • 1 t Garlic Powder
  • 1 t Onion Powder
  • 1 T Olive Oil
  • 8 oz Cream Cheese, you can use 1/3 less fat
  • 2.5 oz Package Real Bacon Bits
  • 4 oz Shredded Cheddar Cheese
  • 1 Pckg Dry Ranch Dressing or DIY Equivalent
  • 1-1 1/2 C Chicken Broth
  • Dried Parsley sprinkled on top

Instructions

  • Place a large skillet over medium heat and add olive oil
  • Put your chicken in the skillet and sprinkle with the salt, pepper, garlic powder and onion powder.
  • Stir and cook the chicken until it is almost cooked through.
  • Put your chicken in a 9×13 dish. Add the cream cheese to the skillet with the juices that were left behind. Stir and cook until cream cheese is pretty much melted.
  • Add the shredded cheese, ranch, and bacon pieces to the skillet. Stir until melted.
  • Stir and pour in your chicken broth. You don't want this too thick but you don't want to thin it out too much. You goal is a little thinner than gravy.
  • Pour your sauce over your chicken breast pieces. Sprinkle with the dried parsley.
  • Bake at 350 degrees for about 10-15 minutes, until everything is heated through.
  • Serve on top of your low carb base of choice.

      I would say 4-6. Almost all of my recipes feed the 5 people still at home and they are all pretty much adults (two teen boys). Some recipes will feed a lot more. This recipe is one of their favorites.

    Hello! I was curious about the ranch dressing packet. I would assume that on THM it isn’t on plan. Do you use Rhonda’s ranch?

      i Angel. I have not made Rhonda’s ranch. I have used Hidden Valley or generic version a few times. I am sure there is something in there that is off plan. I found a ranch recipe on allrecipes.com that I have used in place of the packets. If you like Rhonda’s ranch, then use that recipe in place of the ranch packet. I am sure it will be great.

      I found a clean ranch at Costco. I am sure Walmart carries one as well. I just bought another one for about 6 or 7 dollars. It lasts about a year or so in my house.

    I’ve made a recipe similar to this before, but it wasn’t nearly as good as this one. Served it up with some sauted veggies. There were no leftovers!
