Low Carb, Crockpot, Creamy Italian Chicken (with a hidden veggie)
This really easy, low carb, THM S, Italian dinner is delicious!
My main goal with this blog is to give busy women a place to find healthy recipes that are teen boy and hubby approved. This was a hit with my family. There ended up being no leftovers! This creamy, crockpot chicken dish is perfect for busy days. You could easily prep this with your meal prep if you needed to. Anything that will help me and you stay on plan!
You can adapt this recipe however you need to.
I used 4 oz of 1/3 less fat cream cheese in the dish. You can use full fat or heavy cream if desired. I also hid 1 1/2 cups of frozen okra in the dish as well. No one knew! I have been a little lax lately with my veggies intake (we have had a very stressful time recently) and I wanted to find ways to get more veggies in my daily diet. And my family could always use some help with their veggie intake. Your family won’t know if you add the okra, you just have to blend it up really well. And if you didn’t already know, okra is a superfood!!
This is a really simple recipe that can be thrown together in a few minutes.
The sauce isn’t very saucy. It ends up being pretty thick for a sauce. You can easily add an extra can of tomatoes or some both or water to thin it out. I debated on whether to add an extra can or not. I ended up leaving it thicker and everyone really liked it that way. If you are dairy free, tofu might be able to take the place of the cream cheese. Also, as written, this dish can be used in any trim healthy mama fuel setting that you want. The sundried tomatoes I used were not packed in oil. For an E, serve over red lentil pasta. Spaghetti squash would also be a great “pasta” to serve the chicken over. Top with some parmesan cheese and fresh (or dried) basil. Yum!
Crockpot Creamy Italian Chicken
Ingredients
- 2 Lb Chicken Breasts
- 1 T Minced Garlic
- 1 T Tomato Paste
- 14.5 oz Diced Tomatoes
- 1/2 C Sundried Tomatoes
- 1 t Salt
- 1/2 t Black Pepper
- Few Shakes Cayenne
- 2 t Italian Seasoning
- 4 oz 1/3 Less fat Cream Cheese
- Parmesan Cheese to Sprinkle on top
- Fresh or Dried Basil for topping
- 1 1/2 C Frozen Okra
Instructions
- In your crockpot mix together diced tomatoes, minced garlic, tomato paste, Italian seasoning, sundried tomatoes, tomato paste, salt, and pepper. Place your chicken breasts on top of the tomato mixture. Cook for 4-5 hours.
- Remove chicken breasts to a plate or cutting board. In a blender place liquid from your crockpot, frozen okra, and sundried tomatoes.
- Blend until smooth.
- Add cream cheese and blend again.
- Pour blender mixture back into the crockpot. Either cut or shred your chicken and place back in the crockpot. Stir. Taste. See if you need/want more liquid or more seasonings.
- Serve warm over pasta of choice.
