This low carb, trim healthy mama s, hamburger helper inspired dinner was a hit.

Making my family tasty dinners that are healthy and on plan for me is my goal. I want to make all of us happy and healthy. This low carb hamburger helper did exactly that. This is so quick and easy. Everything is made in your skillet, so a perfect year round dinner. Need something quick, easy, and family friendly, this is one of those meals. It is cheesy and flavorful. You can heat it up if you want. We added some Tony Caschere’s to our bowls.

You can use whatever ground meat you have. I had a package of 80/20 that I bought on clearance for $2.24 that I used with a package of 97/3. I just scooped out the excess fat and put it in my trash. You can use ground turkey, chicken, venison, etc. This is perfect for any ground meat. This recipe sneaks in some mushrooms too. So you get mushrooms and cauliflower in this recipe. You should be able to feed your family for less than $10 for this whole meal!

Here are a few tips when making this low carb hamburger helper

The first one, you can make this up as part of your meal prep. I have been absolutely loving this meal prep. I pre-measure all ingredients and put everything in the tote. This works so well. I even put the meat in the tote frozen a lot of the time. This recipe is the top right tote. I hid mushrooms in this recipe as well. My mushroom hater had no clue. He isn’t allergic, he just doesn’t care for them. I also used frozen cauliflower and kept it in the tote. I broke up the cauliflower before I put it in the skillet. I wanted it to absorb as much flavor as possible.

Low Carb Hamburger Helper

Ingredients

  • 1 1/2 Lb Ground Beef or other ground meat
  • 8 oz Mushrooms, finely diced If your family likes mushrooms, you can leave them larger
  • 1 T Minced Garlic
  • 1 Med Onion, diced
  • 2 t Smoked Paprika
  • 1 1/2 t Chili Powder
  • 1 t Garlic Powder
  • 1 1/2 t Salt
  • 2/4 t Pepper
  • 1 T Worcestershire Sauce
  • 1 Pkcg Frozen Cauliflower Florets
  • 2 t Dried Parsley
  • 2 C Shredded Cheddar
  • 1 T Tomato Paste
  • 1 C Water

Instructions

  • Brown ground beef. Add onion and cook another 3-5 minutes. Add mushrooms and minced garlic. Cook for at least 5 more minutes.
  • Add chili powder, paprika, salt, pepper, and garlic powder Cook and stir. Add tomato paste and water. Stir. Add the cauliflower pieces. Cook until everything is cooked through. Taste and adjust seasoning as needed.
  • Top with shredded cheese and dried parsley.
  • Serve hot with additional cheese, if desired.
