Low Carb Italian Chicken and Spinach Casserole

Low Carb, trim healthy mama s, Italian chicken and spinach casserole was a hit with my family.

I made this recipe really easy by using precooked rotisserie chicken from Costco. To make our lives easier, that is one money and time saving tip I offer. I almost always buy one. This recipe calls for precooked, shredded chicken. You can always bake a chicken or cook up some chicken breasts. Even though I don’t care for cooked spinach, in this Italian chicken and spinach casserole, it wasn’t too much for me. It ended up being ate up by family. They loved it.

I had a bit of an oops with the recipe.

I was making this as part of my meal prep and I was doing too much at once (pretty typical of me). I had the whole meal prepped in the pan and was getting ready to put everything in the fridge and I saw that the microwave said end. That’s when I realized I left the spinach out! I debated on what I should do. I ended up scraping the top off mixing in the spinach and adding the top back on and added a little more cheese. Your dish should look better than mine. 🙂

This is such an easy recipe for a busy day.

You can prep this early in the day and put it in the oven at diner time or make it part of your weekly meal prep. I have been loving this meal prep that I have been doing. All of the meat in the picture above (except the Italian chicken and spinach casserole) goes into the totes frozen so I don’t have to worry about the meat going bad if something happens and my menu needs to change. If you need something easy and family friendly, this is it.

The hardest part of this recipe is shredding the chicken. I had one of my sons shred the chicken while I prepped other things. If you cook up your own chicken breast and have a mixer, that is a really easy and super fast way to shred meat. I used cottage cheese in the recipe but wanted to use ricotta cheese. I though I had some but it was used in another recipe. You can use ricotta cheese or cottage cheese, whatever you have in the house or want to use. One final tip, if your spinach has a lot of liquid, drain it. It will cause the casserole to be too liquidy.

Low Carb Italian Chicken and Spinach Casserole

Ingredients

  • 4 C Pre-cooked chicken, shredded
  • 1 1/2 C Cottage Cheese
  • 2 Eggs, whisked
  • 1 T Minced Garlic
  • 1 t Italian Seasoning
  • 12 oz Frozen Chopped Spinach, thawed I cooked mine for 3 minutes in the microwave
  • 1/2 C Parmesan Cheese
  • 1 t Salt
  • 1/2 t Pepper
  • 24 oz Approved Marinara Sauce
  • 2-3 C Shredded Mozzarella Cheese
  • 1/2 C Shredded Parmesan cheese, you can use the green can if you don't want to buy the shredded

Instructions

  • Mix the chicken through the spinach together in a bowl. Mine is spinach free because I forgot it.
  • Place in a 9×13 greased pan. Top with the marinara and sprinkle on cheese. Sprinkle on some Italian seasoning and garlic powder.
  • Bake at 350 degrees for 15-25 minutes until hot and bubbly.
  • Serve warm with a salad.
