Instant Pot Chicken Breasts

Do you need cooked chicken fast?

I was going to say in an instant, but I thought that was too predictable. I had to change my dinner plan one night at 5:30. We are in the snowy and icy state of Texas with frozen water pumps and rolling blackouts. I needed some chicken breasts cooked really fast, so I pulled out my instant pot. In no time I had perfectly cooked chicken breasts.

I was using these chicken breasts in a Mexican dish, so I seasoned them with some Mexican seasonings.

You can season these chicken breasts however you want. If you need a neutral flavor, I would season with 1 tsp of garlic powder, smoked paprika, and salt. 1/2 tsp black pepper and onion powder. That should be neutral enough for just about any meal. If you like heat, add some cayenne pepper. This is so versatile, you can use just about any seasonings for your dinner. Add some Italian seasoning for an Italian dinner, Tony Chachere’s for Cajun. The possibilities are just about endless.

My last tip for chicken breasts that need to be shredded.

If you cook up a batch of chicken breasts, whether in your instant pot, crockpot, or just baked. your mixer will take quick work of them in an, wait for it, instant!! You can use a kitchen aid or even a handle held mixer. Within a minute or two at the max, you should have perfectly shredded chicken. These instant pot chicken breasts don’t have to be shredded. They can be sliced or even kept whole. I used these in a low carb chicken enchilada recipe so I wanted them shredded. However you them, the instant pot will make quick work of them.

Instant Pot Chicken Breasts

Equipment

  • Pressure Cooker

Ingredients

  • 1 1/2-2 Lb Chicken Breasts
  • 1 C Water

Seasonings of choice

Instructions

  • Place 1 cup of water in your instant pot. Place trivet in. Season your chicken breasts and place on trivet.
  • Place lid on top and seal. Make sure vent is closed and set to manual high, 10 minutes.
  • Once the timer is up, allow to naturally release for 8 minutes. Carefully vent any unreleased steam.
  • Process as needed for recipe.
