Low Carb Mexican Sliders

I had sliders planned for this weekend. I was planning on a regular style slider with a low carb bun but we had some leftover queso, so I tweaked my plan and made them Mexican style.If you don’t have queso top with pepper jack or cheddar cheese slices. These were an absolute hit with my family!! You can add more to your burger mix if you want, add some cayenne or even a packet of taco seasoning. I think finely diced jalapeno would be great but I didn’t have any in my house.

I had planned on making oopsie rolls but making them small to fit the slider size.I have used oopsie rolls as a burger bun in the past but I ran out of time. I ended up making this a trim healthy mama s helper by using one piece of sprouted bread. I took a small lid from a canning jar and cut out 2 circles. Use whatever bun option you want. Or you could do what my husband did and combined everything in a bowl without any bun at all.

Low Carb Mexican Sliders

Ingredients

  • 2 lb Ground Beef
  • 1 t Salt
  • 1/2 t Black Pepper
  • 1 t Chili Powder
  • 1/2 t Ground Cumin
  • 1/2 t Onion Powder
  • 1/2 t Garlic Powder
  • 1/2 t Smoked Paprika
  • 1 T Finely Diced Jalapeno, optional
  • Bun of Choice

Toppings of choice: Diced Onion, Chopped Cilantro, Diced Avocado, Pickled Jalapeno, Diced Tomatoes, Queso or Sliced Cheese

Instructions

  • Mix the hamburger meat with the seasonings.
  • Form the meat into small patties. We make a small indention in the middle to help with shrinkage.
  • Grill or cook until done to your preferred tastes.
  • Prepare your bread.
  • Add your slider and desired toppings.

      I have two sliders, side salad with ranch, and about 1/4 cup of air fried potatoes. I added some Mexican inspired seasonings
