Low Carb Sautéed Italian Squash

Low carb sautéed Italian squash, an easy and yummy side dish.

I was looking for something to pair with my version of the viral tiktok baked feta pasta and didn’t want a salad. Sometimes salads get to be boring. They are such an easy side dish but some times you can overdo something. This was the perfect side for the baked feta dish. I would serve this as a side where a little Italian flavor would work. My son who doesn’t like squash said it was good. I’ll take that as a win! This recipe is so simple, uses basic ingredients, and squash is in abundance right now!

I tend to buy the yellow squash and zucchini pack from Costco every time I go. This recipe will be made again and again. Squash has such a mild flavor, you can do so much with it. My kids grew up eating zucchini hidden in so many things, they newer knew what to expect. You can honestly do so much with it, even make desserts with it. I made a lot of desserts with our homegrown zucchini. They never knew what I was going to do with the next zucchini I brought in.

I added a little red pepper flakes to the top of this dish. You can spice this up more than I did if your family likes heat. I tried to keep it on the slightly mild side. This is such a great change up from always having a salad with Italian dishes. I also had shredded parmesan on hand so that is what I used, If you need to keep this on a bit more of a cheaper side dish, go ahead and use the green can. Utilize what you have at home, no need to make a trip to make the store to make this. If you make this, let me know how your family liked it.

Low Carb Sautéed Italian Squash

Ingredients

  • 2 Med Yellow Squash
  • 2 Med Zucchini
  • 1 T Olive Oil, plus more if you need it
  • 1 T Minced Garlic
  • 3/4 t Salt
  • 1/4 t Black Pepper
  • 1/2 t Red Pepper Flakes
  • 1/4 C Chicken Broth
  • 1/4 C Heavy Cream
  • 1/2-1 C Shredded Parmesan Cheese

Instructions

  • Cut up your squash. I like to cut the ends off, slice in half longways and then turn and slice again. You want 4 long strips. And then you can slice into little triangles. Clear as mud?
  • In a large skillet over medium heat add some olive oil and the squash.. Cook for about 5 minutes.
  • Add the minced garlic and cook for another minute or two.
  • Add the seasonings and cook for another minute.
  • Add the chicken broth and the heavy cream. Stir and cook for a few more minutes.
  • Once the liquid reduces, a few minutes, add the cheese and chili pepper flakes.
  • Serve hot with your desired main dish.
