Red Beans and Rice: Trim Healthy Mama E
This Trim Healthy Mama E Red Beans and Rice recipe is so easy!
You really don’t need a recipe to follow to make this. It is so simple, even if you don’t use my shortcut. I used Butterball turkey sausage (it looks like Ekrich type sausage). This keeps the fat low, and you are able to eat this as an E meal with the beans and rice. My kids aren’t always thrilled with E meals as is, but they really liked this one. Hubby had seconds!
This recipe is so easy and adtapable.
This was part of one of my crockpot meal preps. I love meal prepping (okay, I love having my meals prepped) and using my crockpot. Those two things really help my sanity and help me stay on plan. As written, this is a crockpot recipe. However, you can just as easily make this in a skillet. I just needed the convenience of dumping ingredients and walking away. I also used my foodi because it has the sear and sauté function and the slow cook function.
You can use fresh or frozen veggies.
I kind of cheated when I meal prepped the recipes. I used the frozen cooking blend. It has onions, celery, and bell peppers in it. This meant I didn’t have to chop up veggies before cooking the recipes. If you want to use fresh, that is definitely okay. Also, you can spice this recipe up or make it super mild. I often make recipes on the milder side and then we spice up our own dishes.
THM E Red Beans and Rice
Ingredients
- 13 oz Butterball Smoked Turkey Sausage, cut into coins
- 1 1/2 C Frozen Cooking Blend Or 1 medium onion and bell pepper, chopped
- 2, 15 oz Cans Red Beans, rinsed
- 1 t Salt
- 1/2 t Pepper
- 1 t Smoked Paprika
- Few Shakes Hot Sauce
- 2 t Minced Garlic
- Cooked Brown Rice
- Chopped green onions for topping
- 12 oz Can Rotel, undrained
- 1/2 to Full Rotel can with water I like a little sauce but not too much
Instructions
- Cook the cooking blend for a little bit. If you are using fresh you will need some water or broth. Cook until you are satisfied with the doneness. I don't like crunchy bell pepper in my food, so I like mine well done.
- Add garlic and seasoning. IF you are using a skillet and a crockpot, transfer this mixture to the crockpot.
- Add the sausage. Stir.
- Add rinsed beans and Rotel.
- Allow to cook on low 3-4 hours. You can add a little liquid if it seems dry. Taste and add more seasonings if you think it needs it. We typically add it to our bowls.
- Serve hot over cooked brown rice. Top with green onions if desired.
I would suggest 10 minutes in the instant pot.
I’ve read through the recipe and I’m not finding the Rotel listed but it says to add it to the beans in the instructions. I’m guessing 1-2 can? Thanks Jennifer for all you do
