Ridiculously Amazing Low Carb Ricotta Bake

This low carb, trim healthy mama s ricotta bake is amazing!

I absolutely love coming up with great recipes that are easy and family friendly. I can easily get stuck in Mexican food mode too. There have been days where I had Mexican food all day, for every meal. Sometimes I have to snap myself out of it and find new flavors. This dinner was an answer to that need.

This recipe is so easy, it’s perfect for busy days.

If you need a super easy recipe for busy days or days where you don’t want to be in the kitchen for a while, this recipe is perfect. Everything comes together super fast and uses simple ingredients. I did use dreamfields pasta but you can use any pasta alternative your family will eat. My family isn’t keen on most of the options but are completely fine with dreamfields.

Minus the pasta, I bought everything at Aldi.

This ricotta bake can be really cheap when you shop at cheaper grocery stores. If you are needing to pinch pennies, this will be one of those recipes that you will want to make. I used half a package of Italian sausage links (2 1/2 links) and very few ingredients. The cost of everything has gone up and we are having to be extra careful with our budget. If you don’t care about having a trim healthy mama crossover, you can use veggie pasta, like lentil or chickpea. This just might become your family’s newest favorite recipe!

Low Carb Ricotta Bake

Ingredients

  • 2 1/2 Links of Italian Sausage
  • 1 T Minced Garlic
  • 2 t Italian Seasoning
  • 2 8 oz Cans Tomato Sauce
  • 14.5 oz Diced Tomatoes with Basil, Garlic, Oregano
  • 1 C Shredded Parmesan Cheese You can use some of the green can kind and some shredded mozzarella
  • 15 oz Ricotta Cheese
  • 1 1/2 C Shredded Mozzarella
  • 1 t Salt
  • 1/2 t Black Pepper

Instructions

  • Brown meat in a large skillet. Add the garlic, salt, pepper and Italian seasoning.
  • Cook your pasta of choice and place in a greased 9×13 pan.
  • Add tomato products and shredded parmesan cheese to the sausage. Yo
  • Stir. Add to pasta in pan. Carefully stir the sauce on the pasta. It doesn't have to be perfect, just coast some of the pasta.
  • Dollop the top with the ricotta.
  • Stir it together. Place in a 350 degree preheated oven for 15 minutes.
  • Take out of the oven.
  • Top with remaining shredded cheese.
  • Place back in the oven and bake until cheese melts, no longer than 10 minutes.
  • Serve hot.

      Yes, I would just add a little bit of seasoning to it.
