  • 2 delicata squash, halved lengthwise and seeded

  • Olive oil

  • Salt and pepper

  • 1 lb breakfast sausage (use turkey sausage for a lighter version)

  • Parmesan cheese, for topping

1. Roast the Squash

Preheat your oven to 375°F. Cut your delicata squash in half lengthwise and scoop out the seeds.
Lightly score the flesh, then brush each half with olive oil and season with salt and pepper.
Place them cut-side down on a baking sheet and bake for 25–30 minutes, until tender.

2. Prepare the Filling

While the squash bakes, cook your sausage in a large skillet until browned. Remove and set aside.
In the same pan, sauté the onion in a drizzle of olive oil until soft and translucent. Add the garlic, cooking for about 1 minute, then toss in the kale. Cook until wilted and tender.

3. Combine and Season

Return the sausage to the skillet and stir everything together.
Taste and adjust seasoning — add red pepper flakes if you like a little kick!

4. Stuff and Bake

Flip the roasted squash halves over. Sprinkle a little Parmesan cheese inside each half, then fill generously with the sausage mixture.

Ingredients

  • 2 Delicata Squash
  • 1 Lb Sausage, I used breakfast
  • 1 M-L Onion
  • 2 T Minced Garlic
  • 3 C Kale, add more if desired
  • 1/4-1/2 C Parmesan Cheese

Olive oil, salt, pepper, red pepper flakes, all as desired

Instructions

  • Cut the squash in half lengthwise and deseed them.
  • Score the squash if desired.
  • Add a little oil all over the squash. Season with salt and pepper. Flip over and bake, cut side down for 25-30 minutes at 375 degrees, or until soft.
  • Make filled. Cook sausage.
  • Remove sausage from skillet. Add a little oil, if needed to the skillet. Add diced onion. After a few minutes, add the garlic.
  • Add the kale.
  • Cook until soft.
  • Remove the squash from the oven when cooked.
  • Flip over. Sprinkle with parmesan cheese.
  • Fill with stuffing. Top with more parmesan cheese. Bake about 5 more minutes.
  • I had some leftover. Great for a quick breakfast or lunch the next day.
  • Remove from the oven.
  • Serve as desired.
