Spectacular Low Carb Lasagna Soup
This low carb lasagna soup is spectacular!!
It is a trim healthy mama s recipe as well. If you are looking for a new soup to add to your menu plan that the whole family will love, this is it!! This recipe isn’t just easy, tastes amazing, it will be a huge hit!! I served it to 11 people, and they all loved it! I am so excited with how this turned out!!
With cold weather here, this is the perfect soup to make.
This year, instead of Christmas gifts, my family all went in on a cabin. There was a cold front that came through Saturday night and I knew I wanted to make a soup. This soup ended up being a huge hit!! Everyone loved it. I am so happy with this yummy soup recipe. I now have another delicious trim healthy mama soup to add to my collection.
You can easily make this recipe with a few substitutions if you need to.
My basil plant froze a couple months ago when I was out of town. I paid the crazy price for fresh from WalMart. Fresh is essential to this recipe, but it did add a little extra flavor pop. Everyone didn’t add the basil, so it is really good without it. If you do use fresh basil. roll it up like the picture above. And then slice into strips. After it’s in strips, run your knife through it and chop into smaller pieces.
Use noodles that are on plan that your family likes.
When I went to buy my dreamfields pasta for this soup, I could only find spaghetti noodles. I went 2 different WalMarts and could only find spaghetti. I ended up having to buy a different pasta and this was more of a crossover. I used chickpea pasta. I didn’t check the numbers, so this could have been an s helper. Use whatever your family will eat, even veggie noodles like zucchini or spaghetti squash. You could even leave it out if you can’t find anything that will work.
Low Carb- THM S- Lasagna Soup
Ingredients
- 1/2 Lb Italian Sausage
- 1/2 Lb Ground Beef You can use all Italian sausage or ground beef if you need to
- 1 M-L Bell Pepper, diced
- 1 M-L Onion, diced
- 1 T Minced garlic
- 14.5 oz Italian Style Tomatoes, I used Petite
- 8 oz Tomato Sauce
- 3 oz Tomato Paste, 1/2 6 oz can
- 16 oz Beef Broth
- Ricotta Cheese, a good tablespoon or 2 per bowl
- Parmesan Cheese to sprinkle on top
- Fresh or dried basil to sprinkle on top
- 1/2 Box of Pasta
- Additional water to keep it soupy and not too thick
Instructions
- Add a tablespoon of olive oil, or other fat, to a large pot. Add chopped onion and cook for a few minutes.
- Add bell pepper and garlic. Cook for another few minutes.
- Add meat to the pot and cook through.
- Cook through.
- Add tomato products and broth.
- Allow to simmer for 15 minutes or so. You could easily put this in a crockpot on low for a couple hours. Add pasta and cook until the pasta is almost finished. Take it off the heat.
- Ladle soup into a bowl. In the center spoon on top the ricotta cheese, sprinkle on some parmesan cheese, and add basil if desired.
